I have 7 slabs of baby backs rubbed, with my favorite home made rub, sitting in plastic and resting in the ice box. The eighth slab I have Butt Rub rub on.

In the mornig I'm going to do two slabs with TexasBBQ Rub (as suggested on web site) and two slabs with Emeril's rib rub (using mustard to hold it on). I've got a 6 pound butt that I'm going to rub with Texas BBQ Rub (as reccommended on the web site).

If everything goes well, I'll die of a pork OD Saturday. :D If not I'll have to cool the ribs and vac pack them for Sunday. Then put a turkey on Sunday and put up with my wifes relatives sunday afternoon and evening. :roll:

Think I'm gonna cry as I watch them eat my ribs :( and pulled pork :( .

What a way to go, BBQ pork O.D. !!! Sounds great and good luck (your gonna need it with the inlaws).

Can't wait to hear how the tast turns out between the different rubs. Let us know.

While I sent my wife out shopping, I quickly slathered mustard and Texas BBQ rub on a butt. Plugged in the electric smoker and put the butt on. She never noticed the electric smoking away.

I did only 8 slabs of ribs today (Saturday). They look and tasted pretty good. The only thing is I left them in the foil a wee bit to long. Talk about falling off the bone. After the samples I cooled and vac packed them for tomorrow.

The butt took longer than I thought. It took just shy of 12 hours at 235 degrees. About 2 hours a pound. I thought it would take about 1.5 hours per pound (or less). The butt pulled ok. I pulled some and choped some. The naked meat tasted fantastic. The pulled pork is sitting in vac packs waiting for tomorrow also.

In the morning (if I wake up :lol: ) I'm going to do the last 4 slabs on the grill :( . I need the smoker for the turkey. I figure to put the turkey on around 10 am. It should be done between 1 and 2. Depending on how fast the turkey is cooking about 1/2 hout before its done I'll boil some water and put the vac packed food in it.

P.S. The Texas BBQ Rub on the butt was pretty good. I have to use it again although its not as good as my special home made rub (yeah right!).

Hey Dude - That must be one small turkey to only smoke for 3-4 hours. :?:

No kidding on the turkey.....what size was that! I was assuming (and you know what assume means) that you would have to smoke a turkey about the same as brisket. Am I wrong in this thinking? I would like to try and might need to know the temp and length for cooking.

The bird actually took about 5.5 hours. It was a 12.5 pound bird. In April I did a 12 pounder and it hit 180 in 4 hours at 260. This one I did at 270 and thought it would take about the same time.

I forgot the, "Its done when its done" rule.

I was too tired to make the rest of the ribs :cry: . Darn it! They ate up all my rubs and pulled pork :cry: . No left overs. A lot of the relatives said the pulled pork was one of the, if not the best they ever ate (I love relatives, even if they are my wife's). I really think the Texas BBQ Rub made a big difference in the pulled pork. Unfortunately, with no leftover, it can't pass the co-worker test on Monday.

Over all the get together was a success :D

You can do what I did. I told everyone at work if they wanted to bring the sides i would cook the meat. I cooked them up two butts and turned it into pulled pork.We ate off it for 2days. Since then I've picked up two small b-day parties. First time I've been paid for my food :D .All i do is bring the meat to them the day they need it and they supply the rest of there party. For now it works out great we'll see where it goes.

I've done as you suggested before. However, I have special taste testers at work that I try food on. I've been told that I make great ribs. I'm trying for a decent pulled pork, then work on a brisket.

My taste testers are from North Carolina and Louisiana. If they tell me my BBQ is like home I'm estatic!
