I have tried a lot of rubs in my time, and some seem too sweet or too salty. I do like more salt than sugar tho. Don't cook in cook-offs or anything like that, just at home for the family and friends. I have tried to make my own, but can't seem to find something I like. Sure, they are not bad, but.....
I been usen the Texas rub, man that is good stuff.
Like to try new stuff, and do enjoy making my own rubs. The family likes testing out the finished product. My wife call the kitchen my lab.
I would like to ask if anyone out there has any pointers on making rubs, or rubs you don't mind posting.

Hey FIU, Look here, Davidbama(ya haedly ever see him in here but he does come once in a blue moon) sent me a coupla recipes. 1 for a rub & the 2nd for a vinegar based BBQ sauce. I don't know about he rub as of yet but he does have a pretty good sauce. I did tweak it some. Gimme a holler & I will be happy to foward his e-mail with those recipes on there.

The only advice i can give you is to keep on tryin different rubs and experimenting with rub recipes till you find what you like. I try new ones all the time. Here's a rub i use on just about everything that i came up with of course you can add or take away stuff and change the amounts of ingredients at your will. I came up with it mainly for use on ribs but as i said earlier i use it on just about everything. No complaints yet.
2/3 cup brown sugar
2/3 cup granulated sugar
1/4 cup smoked salt
1/2 cup seasoned salt
2 TB fresh ground pepper
1 Tsp ground ginger
1/2 tsp ground allspice
1/2 tsp cayenne pepper
1/4 cup onion powder
1/4 cup garlic powder
and somtimes i add some cumin
Well thats it do with it as yo please

Steve Raichlen, the BBQ-U guy, has a book out called something like, "Rubs, sauces & Marinades". Its a good read with lots of recipes. There is one section that helps you develope your own rub.

FIU, just try a simple salt and pepper rub and see how you like it. Then, build from there. Coarsley grind the pepper, and maybe toss on a little garlic powder or granulated garlic.

On this book though make sure you adjust the salt content way down. Swear this guy gets kick backs from Mortons.
Some of the rubs have over 1 cup of salt. What I would do if he asks for 1/4 cup of garlic salt is just put 1/8 cup of garlic powder in.
As far as making your own rubs it takes a lot of experminting but what I have tested my rubs on are country style ribs (slabs of pork butt). Make about 6 rubs and throw them on the smoker and then test in a couple of hours.
Do you like spicy, sweet, etc?

I like to try and keep things simple. Then if I want to add/change a spice, I can tell what the change was. An ole boy can get lost in all the spices, and before you know it, you don't know what you have or what to change. So the whole mix gets tossed out. It is hard to get anywhere like that.

One of the best rubs I have ever made was mixing my home made stuff 50:50 with texas BBQ rub # 1. :D :D

i've used a rub recipe from Emeril in the past. I've never seen him cook bbq correctly but his rub has a nice amount of sweetness and spice. you can probably find it on his website or foodtv.
