there is this mexican roach coach somewhere off of 59 - they have the best chicken i've ever tasted. its so go you want to eat the bones - seriously - dont know where it is because the father in law is the one that always gets it.

anyway, anyone out there have a clue on how to get that same char - i hear tell that that the secret ingredient is BIG RED

Big Red is a cream soda that is colored red as far as i know anyway unless yard uis talkin bout sumthin else. And i will trust ya on the crab issue.

I don't know Big Red other than the chewing gum but I do know crabs. I had some oth the best hardshells that I've ever eaten last night. They were huge. The lump was the size of a golf ball. Awesome. Rob I feel bad for you life without hardshells would sure make me crabby. Ha....sorry...that was bad.

My beer can chicken always has a nice crust on it. I have used a can of beer and dr pepper in the rack, never tried big red. I spray the skin with cooking spray and then apply a good coating of rub. I smoke it over apple for the first hour at 200, then i crank it up to 300-350 to get the skin crispy and dark. Usually takes about 2-3 hours. Always has a tasty crust on it.

oompappy you're the first upstate I've heard of who knew what hardshells were. During my stint up that way nobody had a clue what I was talking about! I even had to show a picture for one guy!
