decided this past weekend, since the car was broke down, to cook up somehting in the pit. went to the local store here in sealy and picked up some cheap pork rib ends - 3 bucks a pack was hard to beat. pulled out my trusty 'legends of texas bbq' book and tried one of the recipies. i tried the Doziers rub and mop recipie. got the pit up to 325 and let it prime up for an hour, after that it was hot enough to cook, left them in there for 30 minutes before the first mop and turn, after 3.5 hours of that, they were ready. i had two slabs, one of them i mopped wiht BBQ sause for the last 30 minutes. i have to say it was worth the 6 bucks i spent on meat. the mop was oil and vinagar, with some 'dollar store' marinade. that dollar store marinade is great. i'll have to try that again with some real ribs.
