I am makeing Rib Pork Chops for Father's Day's and would like to know how you make your Rib Pork Chops on the grill?
Do you use a Rub?
Do you maranite them?

I like to grill mine in jamacian jerk recipe I have.
Here is the recipe:
2 tb salt
1 tb fresh thyme
1 tea allspice
1 tea cinnamon
1 tea nutmeg
1 tea cracked black pepper
1 haberno (you can also use 2 jalapenos)
1/4 cup worsh
1/4 cup scallions (green part)
1/4 cup white onion
3-4 cloves of garlic
1/4 cup white vinegar
Combine all ingredients in a food processor and turn the bad boy on till they are blended together.
Let it sit for a couple hours to 48 hours(it is killer when marinating for 48 hours.
Of course a good standby is black pepper, salt, and fresh garlic.

I'm to late to help you on this one. But, if it's a good piece of pork and you are grilling it, don't need nothing but a little salt & a little less black pepper. Drop a peice of hickory/pecan on the side, just to add a hint of smoke. You will be surprized at how the pork taste.....like pork.
If a bad cut, you may want to marrynade, brine, soak in Dales, inject, break out the A-1 to help it taste like something.
