I have to smoke some meat one night at work. A 7 hour cook is about all I'll have. Any reason I can't cook several small boneless butts in 7 hours? Normally, I would cook larger bone-in butts, but time is a concern. I could also do a brisket flat in that time frame.

You could also do some chicken and a pork tenderloin.
7 hours though is still a good amount of time. Jack the pit temp up to 275 or so and throw the butts on and you should not have a problem.

Chicken, loins sound good. I have found that butts, large or small, takes about 2 hours per pound when cooking at 215-225.
Briskets I've cooked are about 1.50 - 1.75 hour per pound.

You would need to cut the butts into small pieces, about 3-4 lbs. each.

Get up earlier, run around the block a couple of times, skip lunch, after a week or so you'll start getting quicker. :wink:

Smart thing to do be to cook it at home about a week in advance. Freeze it thaw it and reheat it on D-Day. Can even do it on the pit so they can smell the smoke if you want some ambiance.
