I use tons of brown sugar in my rub and sauces and I have never had it burn. The bark is a dark blood red and real sweet.

Buckeye, is that what they call "free flowing" brown sugar? If so, is it better about not clumping? I've been looking for that around here and can't find it.

Most folk's recipes just say Brown Sugar - nothing special noted. They often recommend "drying the sugar", but that's only air-drying for a short period of time while spread out on a cookie sheet or similar pan.

You spread it out on like a cookie sheet. I never do it because I just throw my brown sugar in the freezer and then when I need it I pull it out and let it sit for a couple of hours. Mix up my rub and then use my hands to break up the lumps.

So it's tha moistyer/humiditee that causes tha clump'n or cake'n of tha sugar....not air....hence tha reeson fer dry'n it out?
All this time I wuz thinkin that air wuz gitt'n in tha bag an causin' it ta "brick up". Come ta think bout it....tha sugar sits in a cabinet direcklee over my stove & microwave. I'm still gunna have a go at that "free flowing" br. sugar.

I learned years ago to put a piece of bread in your brown sugar and it won't harden up.

Nail meet Mr. hammer.

Yeppers I always put mine in the freezer and then just rip it off when I need it. I did the above the stove and all it let me with was a clump of brown sugar. Now put a popscile stick in it and you have some good licking.
