Hi Guys & Gals
When you use a meat thermometer do you leave it in the meat throughout the whole smoking process or just insert it when you want to check the temp? I also want to thank everyone for their input an knowledge on the site it has hepled me a great deal.

I use a Polder (http://www.amazon.com/exec/obidos/ASIN/B00004S4U0/ref=pd_sxp_elt_l1/002-2049365-2439267) with a wire probe. Probe goes in the meat, wire goes from probe to display unit outside of pit.

Welcome to the madness.

I have 2 Maverick ET-73 and I go ahead and leave them both in the meat the whole time. One normally in the pork and the other in the brisket.

I also have a couple insta reads and I just use those for about 1 minute at each time in the chickens.

I use a maverick sets up the same way as Qnbrew's thermo plus mine has a reciever that i can take inside or upto 100 ft away from the transmitter. The only time don't use this is when i m using the rotisserie then i use an instant read thermo.

Depending on your level of need, you can really get away with a $3.00 metal stem meat thermo. Insert it into the thickest part of the meat and allow it to reach it's highest point about 10-20 sec on a big brisket. Those high priced gizmos are really for guys with alot of disposable income who are trying to make up for sexual inadequacies by accumulating toys!

Yet he has a pit that costs more than my life and complains about 40 bucks for a remote therm.

WoodBroke, I dispose of pretty much all my income, and have a few toys. But not yet to get one of those sixual inaddequaking things to talking about :( I mite look into it though, where you get yours :lol:

NU Temps with 3 probes here, 1 in pork roast, 1 in brisket, 1 in ice chest.

If you're asking about whether or not you can leave a dial thermometer in the meat during the cook, the answer is yes (if it is a good one). If it's one of China's best purchased at the local grocery, it will melt. Been der dun dat. However, if you leave a dial thermometer in the meat, cover the face with foil to prevent smoke tars from coating it. I use a polder as well, but will insert a dial during the critical portion of the cook.

I have a Nu-Temp remote with three probes, as well. Sometimes, I put the probe in before I put the meat on the pit and leave it in the whole time. Other times, I'll put the probe in later in the cook but leave it in until I pull the meat from the pit. For quick checks, I use a Thermapen.
