I put together and used my WSM for the first time this weekend. I must say I was very impressed. My previous smoker was the char broil silver smoker and it was very hard to keep a constant temp. But with my WSM I put the meat in and made one adjustment and never touched it again! It was nice to be able to relax while smoking some meat!
:D  :D

Low maintenance is overrated I love high maintenance. More time to sit there and curse, watch them throw temper tantrums, ruin your night. But then afterwards can't be beat.

Welcome ddog...

Don't mind if these folks bash yer WSM. They's just jealous. Most of 'em secretly keepin' a WSM on the side fer them quick 'n dirty cooks when they don't want to spend the weekend Swillyin' out their monster pits.

Not to mention them Friday 'n Saturday nights when you want to sleep instead of makin' sure yer logs don't die out.

Oh yeah, 'cause yer new you don't know what "Swillyin'" yer pit is yet. There's a guy on here who goes by the handle of Swilly who's kinda fanatical 'bout cleanin' his pit. So a really well-cleaned 'n maintained pit is said to be "Swillied" :)

Anyway, welcome to the madness & just overlook the shortcomin's of these here stickburners... they's turning from the darkside & comin' around to the light of the WSM way of cookin'

Actually I never cooked on one I just like the offset because I really use the firebox as a gill quite often.

My Hobbies (That is stuff you do when you have free time right?? ) I like camping, fishing, hunting, sports. I work at Boeing in Mesa AZ. I purchase parts for the Apache Helicopters. No ex-wives. Still with my first wife. I have two cute daughters and a son. My son is 6 years old, one of my daughters is
1 1/2 years old and my youngest daughter is 3 months old. Anything else you want to know? :D 8)

Yeah, I tried cooking a WSM once, but meat was dry, tough, and tasted like metal. Don't know what I did wrong. Does make for a nice flower pot holder. :)

Welcome DDog27. It only takes 2 WSM's to get my pit up to temp and one every 4 hours after that.

Enjoy the TexasBBQRub forum as it is a great place for Q info and entertainment. Ritch
