Hey Grill master educate me on this dutch oven concept. Do you do this over direct heat or put it in a smoker.. ?? Looks interesting..

Carnivore,
You are suppose to put coals underneath and on top of the dutch oven however since i crispy crittered the first attempt i just put it in the smoker and jacked up the temp a bit to around 250-300.

I do allot of dutch oven cooking for various events. Here is my set up. The dutch oven on the foreground will feed 30 to 40 people. It is 17 inches in dia.

Nice looking cobbler. I also love to cook in a dutch oven and got pretty good with them when I was a scoutmaster for 6 years. We did alot of different stuff in one.

Always wondered if it could be done on a smoker so now I know the secret to that.

Here is a real simple fruit cobbler:

This will fit in a 10 or 12 inch dutch oven

1 stick butter 1 cup flour
1 cup sugar 2 tsp baking powder
1 cup milk dash of salt
1 can of fruit
Melt butter in dutch oven. Mix other ingredients except the fruit and pour into dutch oven. Open fruit, drain about 1/2 the juice, and pour remaining juice and fruit into dutch oven. Do not stir or mix.

Place a FEW coals under the dutch oven and cover the entire lid with coals. When crust is brown, cobbler is done.

You can use peaches, cherries, apricots, blueberries, apples, or any combo that strikes your fancy. Also you can add vanilla, almond extract, cinnamon, lemon juice, liqueur of choice, etc.

Here is one I used in the scouts all of the time. Only thing that you really need to watch is the amount of coals you place on top and on the bottom of the dutch oven. They get real hot so be careful.

1-stick of butter
1-yellow or white cake mix
1-can of your favoite fruit

Melt the butter in the bottom of the dutch oven. Pour in about 2/3 of the cake mix. Pour in a can of your favorite pie filling and add a bit of water but do not stir. Pour the remainder of the cake mix over the fruit filling and pour a bit of water on top. Cooks in about 45 minutes. You will be able to smell it.

You can easiely double this recipe and add some cooking time to the deal and away you go everyone will be happy.

Here's a quick chart to help in determining the number of coals, top and bottom, to achieve a certain temp.
