Well, I cooked for about 100 yesterday for my oldest daughter's grad party. It was 94 degrees with about an 80 deg. dew point! I know you southern boys think that's cool, but I think it was too f*%king hot to cook! Standing next to that pit pulling butts while the thing was at 300 deg,. for cooking chicken was BRUTRAL! I would rather cook in 15 degree temps! The new Ford towed the pit like a dream! I cooked briskets, burnt ends, butts, salmon, chicken, beans, and slaw. I can honestly say, that it was the most tired I think I have ever been! Everybody loved the food. Thanks to all my good friends here for helping get me to this point! (Thanks to you too Redneck and Texana!) Whoever posted the carwash advice on the pit cleaning was right on! I can say however, do NOT try to clean grease off of your arm with that thing! I have a 3" x 1/4" patch of skin missing on my right forearm today!

Hey Woody, I cooked a brisket and butt yesterday. It was hot as hell in front of that pit. The brisket turned out really good. I'm starting to get the hang of it. I seem to have alot more friends than I used to.

Some ideas are bad ideas. Some are poor planning. Some are "ya oughta know better". But, carwashes and greasy arms? Now that is just plain stupid.

In Texas we have a saying

'If'en ya caint stand the heat - get out of the kitchen'
8)

Way to go woody! – I sense your confidence is building.

A personal lesson; it can be 100 deg & I still cook with a heavy long sleeved shirt / & just incase U don’t allready – make sure U are taking some type of burn/cut treatment with you.

Good tips Fred! I could never understand how those landscaping guys do it in the heat with the long sleeves and pants though!

I'm with Ya Woody. Us Northern boys aren't used to heat like that.
I Q'ed this weekend and it was reading 95 on the thermometer. I'd rather cook in freezing weather than at that heat. Wow, I sucked down more water than ever before. But hey Woody we'll laugh at them when the temps drop below 50 on them.

But the food was great.

2 Picnics
2 Briskets
5 Hams
5 lbs Chicken breasts
20 sausages
3 racks of baby backs

Hey Fred..you ever heard of Punkin's Fish Trap..up near Lake Meredith? Cant think of the name of the little hick town but it just about a 6 pack drive from Armadillo. Maybe slanted off toward Borger. I get lost in that part of the world purty easy. I mean last time I drove through Booker the sign on the two lane said it had 9-Exits. Guess they was counting driveways is all I could figger. That used to be some mighty fine grazings back in the good old days. Course it could be long gone by now. Ever been there..is it still in bizness..etc? Thanks.

Hey Fred..you ever heard of Punkin's Fish Trap..up near Lake Meredith?

Heck yea! - U remembered that place! / they had fresh catfish right off the lake - Fritch / it was one of the first places I got 'hooked' on (pun) when I moved to TX -

It's long gone & replaced by 'The Catfish Shack"

Lake Meredith  - A big hole in the ground / filled with water / surrounded by rocks / in middle of no-where

Early Panhandle BBQ - Suftens - Dyers -

Yeppers always thought that was a funny place to have a lake. We used to drive up there about once a year for some pistolero competition. Had a fair to smiddling shooting range up near the dam. Always managed to stop at Punkin's for some reason. Sorry to hear it be outta bizness. Hopefully the catfish shack is a reasonable facsimile thereof.
