How much do you gave per lb. for your Brisket?

I priced one and they want $5.50 per lb.

Throught that I would ask before I brought one.

What do you look for when you buy a brisket?

Not all buchers are the same.

I get them at Sam's Club for about 2.50/lb.

Butcher stores around here normally run 3.50-5/lb.

Honestly I just normally run in and grab a crovac about the size that I want to cook. I don't try to analyze the meat. Now steaks and seafood I will.

I look for finely marbled whole briskets, not flats, with a nice white fat cap. I have bought them in South Florida for less than $2.00 a pound on occasion but not recently.

I don't understand how some stores get away with charging so much for brisket??? Brisket is one of the cheapest cuts of meat in the
beef world!!
I usually find them on sale for around 1.00 lb. but if I pay regular, its
around 1.28- 1.59 lb. tops, and thats labeled with the blue stamp choice.
Easy, you didn't say where your from, but I gota guess west coast, or new england. Sorry to see anyone hav to pay that much. Robbery without a gun!!!

Supply vs. Demand. Not much need for them up here since most people don't even know what it is. Hence why Sam's Club is cheap they can buy in good qty and get rid of them.

I would not buy meat from Walmart any where for they put water in their meat and coloring in it. Not a good place to buy meat.

Now SAM'S is a whole different storry they do have good meat.

It must vary by region. Our Sam's and WM carry the same brand briskets. They may vary between choice and select, but neither is injected or colored.

WM has been running $1.28 for a long time. Sam's went from $1.49 to $1.59 a couple of months ago. Price does not vary according to choice or select.

Caught a specail going on at Randal's and HEB a few weeks back. Paid around 79 -89 cents per pound. Bought up HEB and then hit Randal's and got a few more. All were between 8 - 13 pounds each. Size I like to get. I like a thick fat side untrimmed brisket.

Usual price here in Houston is around $1.29 per pound. I couldn't imagine $5 bucks or so a pound. I don't think I would be eating brisket much at that price. But, in your area, you don't have much of a choice.

If you look at the label it does have to tell you if it is injected. I know Wally World here injects their ribs but Sam's does not. Actually almost every grocery store around here inject their ribs.

What's better Select or Choice? Can anyone give the ladder of grading?

from best rating to the least -- prime-choice- select -- now not all meat packer houses pay to have their meat graded so its possible to get a choice or better brisket without any marking on the package, but just to be safe I like to see that little blue stamp saying USDA CHOICE- Ive never seen a prime labeled brisket, but if I did probably couldn't afford to buy it...ha.. Now theres some Kobe briskets Ive heard some teams use on the west coast,
its supposed to be pretty good stuff, but not sure of the grading on it...

Yesterday I cooked 10 briskets I bought at Randalls for .89 cents per pound (limit 2). They also had Miller Lite for sale at 12.99 per case (limit 1). Needless to say, I had to make five trips.

Not feeling real good right now, but I just ate breakfast, so hopefully things will improve.

Right now, Randall's has brisket for 88 cents per pound (limit two) and Coors Light on sale for $12.99 a case (limit one). Bought two brisket to add to my freezer arsenol. Now have some 10 frozen briskets for backup. Had the cashier ring up the cases of beer separately. She did not mind and even volunteered as I did not realize it was on sale, much less, a one case limit until I got the register and she told me. :)

Now I gotta go fire up my pit to start cooking. :D

Last time I was in L.A., I finally found packers at a Smart & Finals. All Costco had was flats trimmed to red meat only.

In my area, Sam's and Wally carry the same briskets. Sam's will be about 25-30¢ more. Sam's brisket, butts, and ribs will be non-enhanced. Wally briskets are non, while all the pork is enhanced.

The Sam's and Wal-Marts around here usually have the same price for briskets (around 1.29/lb). The deal is that WM usually has choice, and Sam's usually has select.

Hey Easy!

If you're from the Toledo area, you should consider a drive up to Eastern Market..the farmer's market downtown Detroit. Biondi's meats has whole, angus, choice for about $1.90 per lb. 12-15 pounders.

Welcome #3587! Was that your penal id? Most resturaunts will buy from either a meat wholesaler or a grocery supply, and usually end up paying a little more for me than what it is when it's on sale. I could never purchase brisket at 88 cents/lb when I was in the business. Some times we'd call a local grocer and make a deal to buy a cases or two prior to the sale so not to hurt their inventory.
