Hey Guys
We did our first brisket this weekend It was good not great.
Now I have 3# of cold brisket in the frig. a lil on the dry side but good.
Any ideas?? :?:

Here's one: Cut into strips, toss with lime juice, fresh cilantro, and sprinkle with fajita rub. Saute' onions and peppers and stir in the beef until warmed through. Good, smoky tasting fajitas. 8)

You could chop some up and mix with cheese and make ABTs with the mixture.

If you're into stuffed green peppers I don't see why you can't use shredded or chopped brisket in place of ground beef. For a real beefy flavor use beef broth to cook your rice in.

Slighty too yuppiefied for me. I slice it up in a stew pot with Texas Rib Ranger Spicy Sauce if you got it...and let it chuckle away for a bit with a lid. That get it hyrdrated..tendered up a little..warmish and otherwise fitten to eat. Also knock a little creosote off the surface if you one of them offset types who like to build a fire in one place and cook somewheres else. Otherwise whutever you like. Now I cant stand Kraft..but Bullseye aint too shabby. I like the Texas Mesquite flavor. I can tolerate Stubbs ok too. Pile it high and deep on the proverbial cheap white bun with plenty of Lousiana Hot sauce (Franks is the Best) and a lot of raw onywan. Dang now that make a person want to slap somebodies mama.

O/K Another Ideer, Shred the beef or cut into small pieces. Put them into a zip lock bag & freeze the meat. Then when ya have another BBQ , ya can use that meat to put into your beans. along with Bell pepper, celery, & onions. A.K.A. The Holy Trinity. Put in whatever BBQ sauce that ya like there. Cook that up on a low heat & then serve with your meal. Just my thoughts.

forgive my sins Redneck, but leftover brisket / pulled pork tasted good in chili. I just pick at the remains from the fridge when ever I open the door

Leftover brisket makes for a good homemade beef and vegetable soup.

Slice it thin and put it in a covered pan,cover it with your favorite bbq sauce and warm it up on a low heat.Makes great sammiches

Agreed, I dont know what tastes best, a 12 hour brisket, or the 12 hour beans the next weekend...Equates to 24 hours of cooking on that ol' beef and the smoke flavor that marries into the beans is out of this world...Some fresh 'from the garden' dried, crushed jalapenos in the mix tops it off real nice.

I always chop up and put a little Q sauce in. Not much. Just a little to keep it from tasting dry. Great on hamburger buns or just plain white bread. Simple, but good eat'in.

We something similar... Slice thin and simmer in beef broth to reheat. Slap a good portion on a hard roll and top with onions and then provolone. Put it under the broiler until the cheese just melts... good stuff...

Danny Gaulden..the genuine Elvis of the BBQ world.. was nice enough to provide this recipe for getting rid of leftover bbq a few years back. Dont think I got around to trying it yet but woud be surprised if it wasnt muy stalweiner.

Southwest-Tex.Mex flavor. We invented this creation in 1975 and sell
thousands of them a year. Here goes:

Standard Flip:
1 - 10 inch flour tortilla
4 oz. or more of thin sliced smoked brisket, pork, chicken, turkey,
sausage, etc.
1- small hand full of canned, frozen, or fresh roasted green chilies
1-small hand full of diced onion.
Several thin slices of a sharp longhorn cheese...or the chez of your choice
A good medium hot salsa or bbq sauce
Diced jalapenos (optional)

Procedure:
Heat large heavy cast iron skillet, or other heavy pan, to medium hot.
Warm flour tortilla about 10 seconds on each side and remove from
skillet....this makes it flexible and pliable so you can fold it over.
Place slices of cheese (one layer deep) on one half of flour tortilla. Now
place meat on top of cheese ( you can layer it). Spread out a generous
portion of green chilies and diced onion on top of meat. Now shoot a
medium dose of bbq sauce or salsa across the top of the concoction. I use
a squirt bottle. Add jalapenos if desired.
At this point, you have a flour tortilla that is "full" on one half of
the circle and empty on the other. Fold empty side over to make a half
circle ( will look like a large fried pie) . Butter both sides of folded
over tortilla. Place one side down in medium hot skillet, and let cook
till nice and golden brown (kinda like a pan-cake), then "flip" over and
brown the other side. Make sure both sides are buttered before browning.
Eat and enjoy.

Variation:
One can put only the meat and cheese in the flip, and cook on both
sides till done. At this point, you can open it (even though the cheese
will be melted and make it hard to open up...it will open), place a layer
of shredded lettuce, slices of tomatoes, thin slices of bell peppers, and
a spread of mayo. Close up and serve. You don't want to put in the
lettuce, etc. till flip is done, for it will wilt and change flavor. This
is especially good on a smoked cured ham flip, or chicken, turkey flip.
Cut in half before serving. Good. Once you get this down, you can do a
million variations on "Flips". Only your imagination will control the out
come. Have fun and enjoy. Great with a side order of spanish rice and
re-fried beans, or just by itself. A very hearty meal.

P.S. You can make a "combination flip" by adding a smear of refied beans
to the "empty side" of the tortilla before folding it over and cooking.

Yeppers...I been sitting around wishing I had a leftover brisket in order to try this recipe. You also aint lived until you have tried his boneless chicken thighs or his coonass bread pudding.

I usually make brisket taco's with mine. Reheat the brisket in a little liquid (beer's good), saute some onions, and shred some monterey jack or your favorite cheese. Heat a fresh flour or corn tortilla, mound in the brisket, cheese, then onions. If you wanna kick it up another notch, add a little fresh pico de gallo (onion, tomato, serrano peppers, cilantro, lime juice, salt).

Chopped left over Brisket and a few spares from the freezer
put them with fried onion and Texas BBQ Rub and pork and beans in
the oven
Man how neat is it to open the freezer bag and its
Sunday BBQ day all over.
