Since I admitted to a bonehead mistake (under BBQ Pits) wid regards to my WSM  and since the Mrs want ribs today, I have had to improvise by attemptin ta smoke some spares on the kettle grill! So far things are goin pretty well! 8) Usin indirect wid water pan and small chuncks of mesquite. Two hand fulls of Kingsford and 8 lit usin Jim's method have managed to keep pit temp steady at 230*! 8) Plan on a 3-2-1 method. Any of yall done this before? Any tips? :? :?

I did it once about a year ago. I didn't feel like fighting to maintain temps in my Bandera, and made a rack of ribs on my kettle. As I remember it held temp good. I did a Minion type of thing that worked well. Smokin

I hope they turned out good, Mic. I used to slow cook ribs on my kettle all the time before I got my offset. I could usually fit two slabs on there and do just fine.

They actually turned out pretty damn good! Didn't really have a hard time keepin the temp steady at 230* and used the simple 3-2-1 method. Least ways the Mrs was happy wid em! Gotta keep her happy wid Qfest comin up if ya catch my drift!

Yeah, those turned out pretty nice! Blowing your top might have been the best thing that ever happened to you, Mic!

Nothing wrong with those ribs. I'd be happy to eat one of those ribs with the sides too.
