View Full Version : Butterflied Butt???

i was just curious if anyone has butterflied a butt and smoked that way as to decrease the amount of time that is required to cook? Not that I really want to do it that way but, my wife sometimes gets a LITTLE anxious when I want to spend all of OUR Saturday hugging my smoker instead of her :wink: :wink: !! I had read somewhere of people doing this and thought if I did this every now and then I could practice more as well as get more "Bark per Butt"!!! Any input, you guy's have helped me more than you know the last 6 months I have been just reading this forum. Thanks for all your help, Also thanks to TBBQR on the best rub I have found. This stuff is so good I sometimes just eat it out of the bag. Also just ordered some of the Brisket Rub #2 And am looking forward to smoking my first brisket very soon.

I've never done it, but I've heard of many doing it. I don't know that it cuts your cooking time in half, but it does reduce it significantly. It certainly does increase your bark.

No negatives, so I believe I'll try it. Including hugging her with one arm and the pit with the other. Drawback there is I guess that'll mean no free hands for a drink! Sounds like it's gettin 2 dang complicated. :roll: :roll:

Tailwagger, welcome to the basketweaving academy. solution to your problem is to stoke the fire in the pit, stoke her fires stoke the pit, stoke the wife. and keep a keg in the middle to replace lost body fluids. and never mix the rubs up from these events :oops: :oops: :oops: :shock: :shock:

I'll be doing basically the same thing today myself my wife picked up a boneless pork shoulder of course wasn't butterflied but cut into chunks or steaks. Oh and the package said for carnitas also but i m gonna cook the same just wont take as long i'll try a post some pics later.

Here's a quick def. and it is very good when i have had it. Might try making it one day myself.
Carnitas is a very famous Mexican dish. It consists of braised pork and can be eaten by itself (and tortillas, a chili sauce) or as the filling in tamales, tacos and burritos (yuk). The pork is first simmered for a long time to make it really soft and then braised in the oven to make it crispy. Since the recipe is very simple and does not involve any chili sauces everyone likes carnitas. You can add the heat on your own as you eat it

Yea it does, thank for the info Master. Braiser pork sounds ok but I ain't much on the toco, tamales, and burro thing. Been to Poncho's one time years ago and took about 3 days to get over it. Went to Toco Bell (drive thru) and got a cold drink. Oh well someone must eat the stuff, it's starting to get all over the country now :shock:

Here are some pics of my progress so far first pic is when i first put it on and the other about 3 hrs in also smokin some taters too. I am spraying the pork with a apple juice and midori liquer mix every hour. Temp level is 220-230 range .

I did something like that when I bought a boneless butt for the first time. I took it out of the package, and it fell apart into chunks. I tossed the chunks with some oil, rubbed sage, black pepper, and I don't quite remember what else and put them on the top shelf of the pit. After about six hours, I took them off, and they were great. Talk about plenty of bark!

Get yourself one of the hard hats with holders for cans of beer on each side. There is tubing that runs down, like a straw, so you can have hands free beer.

I recently had the same question come to mind. If you double the surface area you will dramatically reduce cooking time and get more bark as well. I've been planning on trying it.

Well here's the final pics and result. The flavor was awesome however the pork was a little dry but not to much.

Well, I got hooked a little more than 10 years ago, but I managed to get hooked to a lady that I don't have to make deals with to drink my beer. 8)
