View Full Version : "3 and Down"....is it that important?

Hey Gents!

Long time no talk to....work has been kickin' the snot out of me. :evil:

Before I say another word, much love to Dallas Mike and the Redneck Cooker! Much oblidged for the great Texas hospitality! Red, next time I make it down, I'll plan better to make it out west of Ft Worth to see ya! And Dallas Mike....I still have dreams about that place we went to. Those of you in the Dallas-Fort Worth Area need to check out this place yesterday! "Bone Daddy's House of Smoke"....it's like "Hooter's" meets your favorite "Q" joint! Outstanding place!

Now to my question: are the slabs of spares that you cook "3 and down" (3 pounds or less)? I really like Costco's ribs, but they run about 4-5 lbs. Take at least 7.5 hours until they bend when picked up. Tried the 3-2-1 method with rub #1...they still needed another 1.5 hours.

:lol: I use Sams Club ribs all the time. Just trim them St Louis style. Do not forget to smoke your trimmings they are great added to beans.

After reading about these smaller ribs in a few books, I posted about them and found no one admitting they cook them. Then I went searching for them and never found any. On top of all that, I found the larger ribs cook just fine, so ..... I just stick with what I can buy and wonder what all the books are talking about.

Well where is that bbq joint? Aint had no decent storebought bbq since I been in Foat Wuth about the past 20 years or so. Hope I'm pleasantlly surprised. Did he take you to BBQ with a view? Aka..The Smokepit on Belknap?(sic) The only thing that is fit to eat in the house is the smoked baloney sandwich..and they got killer ho made amerikan fries. Other than that they got cold beer and the view is good. Hope somebody can find the link to their website. I forget where I put it right now. That Redneck feller can be a bad influence of folks thats for shore. That son of his named Kyle..now he is a little angel.

I do like smaller slabs, but I don't worry about it too much. I just look for the best marbling. I do chuckle when I see "3 and down" or "3 1/2 and down) marked on a slab that comes in at 3.89#.
