any opions on pecan wood???My neighbor and I cut down a pretty good size pecan tree so I have a bunch just curious if anyones used it???

My favorite wood of all! Kinda between hickory and oak as far as the smokiness goes... works great with anything...

I agree with JameB it's a great wood for smokin it not as heavy flavor as mesquite or hickory.
Naw! It's terrible wood ta smoke with! :shock: Quick tell me where ya live and I'll come haul it off for ya! :roll: :wink:

I use pecan most of the time and get a pick up truck load every hunting season from a bud's ranch... great stuff. My first choice has been either peach, apple, cherry or pear...so far but I don't get the fruit woods too often and only use them for the first 3 hours or so of a cook and only when cooking for my very best of friends and family... enjoy that pecan..

We used to cook with pecan wood all the time cause that's what grew in the backyard. It gives a good flavor especially if you throw some in with mesquite.

I cooked with Pecan wood this weekend, and it was outstanding. Sweet smoke that goes real good with Texas Rub and spices. Dosen't burn your eyes either.

Well Austin, I'd lie to ya and explain how sorry a wood pecan is and that I'd take it off your hands at no charge but since you're so far away I'll just go ahead and tell ya it's a wonderful cooking wood. I've even had some produce kinda a bacony smelling smoke or more like roasted pecans, maybe.
Be careful to season the wood well. It'll sure produce some bitter meat if ya don't.

pecan is first choice for smoking. mix in a stick of mesquite every so often for a really good flavor. make sure it's seasoned for at least six months, preferably longer before you use it though.

:D My dad used nothing but pecan wood to barbeque. We had 400 pecan trees on our place and not much else. I graduated to mesquite, and am going to go back to pecan. I have had people tell me they could taste the differance? They said pecan wood made a bitter taste? I can almost bet that if you cooked with pecan and did not tell them they would not know the differance :twisted:

I can almost bet that if you cooked with pecan and did not tell them they would not know the difference
The avg. person may not - but I can always tell mesq. & don't like it (or better put – is a last choice = i.e. a good cook can use mesq. & not over smoke there meat & I can enjoy mesq. smoked BBQ = but there are few out there IMO / any wood can produce a bitter flavor if over smoked /
Pecan does not burn as hot or long as hickory but is a better over all suited wood /
My personal favs are
1. Hickory = Ribs/Brisket/Sausage
2. Cherry = Ribs/Chicken
3. Apple = Ribs/Chicken
4. Pecan = Ribs/Brisket/Chicken
5. White Oak = any meat
My fav combos are; (so far)
Brisket; White Oak/Pecan
Ribs; Hickory/Cherry/Apple

Fred...what is the ratio you like on the wood combos? (what % of each wood?)
Also, since we Yanks can't get Pecan wood regularly....can anyone tell me where to get some pecan shells? I read someone sayin' they have a hundred pounds of shells...where in the world did you get 'em??
