Grilling vs Open pit BBQ

First...I hope all the good folks in Tejas come thru Rita ok. I have a cousin in Houston and was able to convince her to leave out this morning.

Did anyone see the Bobby Flay BBQ program Wednesday nite? He kept talking about bbq from the Southfork Ranch ("Dallas" tv show) and a group called the Cowgirl Chics (?). But it seemed to me that the food was grilled! Yeah, it was over wood all right (i'm guessin' mesquite) but seemed to be fairly high heat. Now, I'd like you purists to enlighten this yankee: I thought open pit BBQ meant the meat is cooked at least 3-4 feet above the coals and the melting fat drips on the coals, vaporizes, and keeps the meat moist while cooking; thus no need for moppin'.

Am I wrong? If so, then what is "open pit BBQ"???

One more thing....what can anyone tell me about the book, "Barbeque Secrets revealed"??

The only thing that you have to focus on in that sentence is Bobby Flay and girls. Bobby Flay would put semi-decent girls on TV just for the fact he could sit there and flirt with them. They possibly could not tell you the difference between a spatula and a fork but if Flay sees them as macking material well he is on them like Woody on a sheep.

Don't get me wrong I like Bobby Flay but him doing that show is absolutely pathetic. He is way to arrogant to deal with the general public and other people's businesses. Not as bad as Anthony Bourdain but still up there.

No denying the boy can grill and cook but he can't smoke and he knows very little about real bbq. Of course 90% of the people can't tell you real bbq from commercialized ideals of bbq. Most people think if bbq sauce goes on it then it is bbq. No matter that you torched the gas grill to 600 degrees. Seared the crap out of it but hey I threw some bbq sauce on it so I made bbq chicken. So Food Network just played in the generalized concept of what bbq is.

I don't know about ya'll, but I am a sucker for a southern acent. And Kat Cora has a cool one. I can see potential in her. My sister's boss is one of her su(sp) chef on the American Iron Chef by the name of Elizabeth Faulkner (the blond, spiked hair chick). My sister has has a lot of fun helping them and working w/ them behind the scenes. They practice in San Francsico where my sister's resturant is. She says Kitchen Stadium is pretty cool and that Alton Brown is really a funny guy in person too.
