My buddy and I have to cook for around 40 guys in a couple of weeks. We will be doing all 3 meals for a Sat and two meals for Sun. We are going to be having breakfast, lunch and supper on the surf at Cape Hatteras NC. Should be cool w/ the sunrise over the ocean, and breakfast a cookin'. What I need to know is how many pounds of breakfast pork sausage should I get for 2 seperate breakfasts for around 40-45 people? So, in other words, we will be feeding 80-90 people!!! I will be getting it from Hahunta Pork and I am looking to get the tube kind, grill it up and the cut as necessary. BTW, my buddy did this type the other night, only he put the TBR on it and grilled it up great!!!! Thanks

I would think 2, 4inch links per person, per meal, would be fine, with a little extra left over for the heavy hitters. I would get the pork center to weigh two 4 inch links and then work out the the number of pounds needed. :)

If you figure 2 patties per person of about 2 oz each, then you have 4 servings /lb of sausage.
If you are cooking links, usually there are 2 sizes, size 8, 8 links /lb and size 12, 12 links /lb. At 3 links per serving, 5 lbs of link sausage would give you 13 servings and 20 servings respectivly.

Well, using that formula, I came up w/ 24# of sausage. Does that sound right?

I'm sure bacon will be in there too. Last year we grilled it and it didn't shrink up as much and was great tasting...
