Just got done cooking beans for 200. Got my last job (scheduled) of the season on Tuesday. Briskets , butts, beans, slaw, and dessert for 200 at a company luncheon. They are having folks from 18 different countries in and want to show em some "American" cuisine! I'll be proud to help them out! I did 5 paying jobs this summer. Cooked for about 900 and this was only through word of mouth. I was running into folks all summer who had heard of me through "someone who ate my food at a party." Made enough money to re-invest some back into business cards, and a web-site over the winter.Also made enough to payy off about 30% of initial investment . Next year, I want to do about 10 jobs. That is my maximum ambition. Also, plan a couple gratis cooks for churches and charity.
I learned alot regarding logistics of cooking for large groups. Overall, it went far better than I expected. Profit margin (less my time) was nearly 200%! Only had two complaints all summer. "Too much rosemary in the redskins", and "what , no white meat?"
I also learned that THIS IS A HELL OF A LOT OF WORK!!!!!! I had fun and am looking forward to next year! Woodcook
