I got some hickory and put it in a pouch and put it on the charcoal and the wood started on fire. Is it supposed to do that?

If it gets hot enough it will.
Why did you put it in foil?
That is somethiing you do
with a gas grill

Sir, next time if you will, you may want to soak the wood @ least an hour before putting them on the fire. BTW, do you use chunks,logs, or chips?. That will make a difference. Another thing, while you are cooking, be sure to keep that lid closed. That's another thing that will cause your wood to flare up, too much oxygen. Anyway, welcome in Sikk. By all means feel free to jump in @ anytime & by all means don't hesitate to ask any question that you may have. There ain't no such thing as a'stupid' question except for the one that you don't ask.

thanks! Yeah it is sikk addiktionz it used to be my car club name. I have a 98 dodge dakota almost layin frame on 20's, its a work in progress. I made my own charcoal grille out of an old gas grill. I am 20 so my money isn't much and if i do have extra money it goes to the truck! :wink: and i also have an older kenmore gas grill. I want to learn more about the q'in world i want to get a nice one. I just started using hickory chips and rub. What is the best charcoal and what is the best way to light it?

That's like asking a crowd what's the best kind of truck. :lol:

There's pure charcoal called lump that made from hardwood only and there are briquettes made from coal, sawdust charcoal and lime and other stuff. To try a sample of both, go to Walmart and buy Royal Oak Carcoal (bag is lighter than it looks) and a bag of Kingsford. The lump (Royal Oak) will burn hot and fast and leave little ash. The Kingsford ..well... it's briquettes - lots of ash but slow steady burning. I use both, but favor briquettes.

Light it a bunch of ways. fluid, pellet fuel, heating rod, or chimney. Lots of folks here use a chimney with newspaper or pellet fuel to start the chimney going. The foil pack will need to be double wrapped & only need 1 very small hole poked into it - try a smoke bomb with your fav spices as well. Some people will soak there chips over night with spices added in the water. They make some nice chip boxes & I will often use pellets & the cast iron pellet pill/box’s.

Cook off coals – flavor with wood & spices

Kingsford Matchlite is good. Already presoaked so you don't get as much of that lighter fluid smell when first lit. Make sure you let the coal burn long enough to get the lighter fluid smell out before putting meat on. Otherwise, your meat will taste just like it. Nasty.

ps: Got a 2004 Dodge 1 ton four door. Pusing 425 horses and over 800 lbs of torque. Raced a 2005 Dodge Hemi from 30 mph on and smoked him. :)
