Hey all,

Just a quick note to let you know I might get my little sister to sign-up over here and it's all because of you!

Several years ago I bought her an Oklahoma Joes 16" offset smoker since she wanted to learn how to 'cue. I also bought her a remote digital thermometer to help with the cooks. I taught her how to do her first 'cue that consisted of whole chickens over hickory about 4 hours at 225*. She's not had a bad cook since then and we're talking four birds a week for two years.

She asked me about a brisket the other day. A small 5lb one was her choice. Based on 'yall, I told her to rub it with wooster, put her favorite rub on it and toss it on at her magic 225* until it reached 160*. Then, foil it to 190*. When there, pull it off, wrap it in saran wrap and put it in the cooler for an hour. After the hour, slice and serve. Well, she did it again! Fantastic 3/16" smoke ring, moist and tender brisket. She was amazed. (I kind of knew it would turn out listening to you guys/gals)

So, she's now asked now about cooking pork ribs. Guess what? First thinigs out of my mouth were 3-2-1 and TPJ. (I KNOW that one's going to work!)

I think we've converted another one.... :D

For me; passing on the sport of cooking BBQ is a part of the enjoyment of the whole cooking experience - to see a 'newbie' step right in & produce what took me years to learn is a real joy. That's why to this day; if I were to win a World Champion event & some one asked for my method = I would gladly give every detail - I am a FIRM believer cooking BBQ is a family event & passing on a heritage of Texas BBQ is a real privilege.

I love to cook & have nothing to gain by keeping something secret; how I learned this; My best friend in life was a old very rough black man – that some how I got close to & man……. could this guy cook Q – he gave me every secrete – EXCEPT his sauce – his sauce to this day was the best – You could drink the stuff – it was that good – I pleaded with him on MANY occasions – to no avail – he finally told me he would share it before he died – within 2 weeks – my best friend was shot down – putting up Christmas lights – right in front of his 5 year old daughter. I found this out – by reading the front page news the AM after the shooting – yes….. I lost a great father/like friend – how ever had he given me his sauce recipe – his legacy would live on in my cooking & tall tails instead of my memories of him. God rest his troubled soul – but River – you should have given me that sauce recipe.

So that is the reason there are NO secrets with me – I will & have told many every detail of how I cook – I want MY BBQ legacy to live on – when cooked with love & the proper attention – cooking Q is almost a religious experience; it brings out – togetherness & the joy of the food / that my friends…….. is what life is all about = FAMILY & FRIENDS –

It is an honor & privilege to serve people

Awesome story Fred! Sorry about River :cry: I appreciate all you guy's on this forum. I have learned so much the last few months as well, and I agree with you Fred, shareing this stuff is a big part of the fun of it. :wink:

The fun part about sharing a recipe is..

You can be right next to the person you shared a recipe with, you both make exactly the same thing, using the exact same recipe, same temp and same type of cookers. Yet, the food will turn out different. Amazing!

I have never kept any secrets in my cooking either, even in a comp the person right next to me, can watch what I do and what I use, I will even tell him where to buy it, and I will continue to do that because it is the right thing to do.
