Has anyone ever smoked dove?

I have 48 dove breast (I'm considering pulling them off the bone)

I plan to marinate them in Italian Dressing then put half of a Jalapeño on each and wrap them in bacon.

I was thinking I’d cook them hot (275°) with mesquite for about 30minutes.

Does this sound right?

Yeppers..I has smoked/grilled them wiley and elusive holy dove birds on occasion and ..do believe your plan would result in a meal fittin for a king or queen as the gender specific case may be. Now dont know how long it would take eggxactly at that temp but suspect 30 min or so get you at least in the ballpark. My theory be to just cook em till the bacon gets done and you should be good to go. I also be sure and get the el cheapo thin sliced bacon. Have found the thick high dollar stuff can take a long time to get itself cooked in these type scenarios. Might consider hitting them with a little sweet glaze on the end too. Happy eating.

Funny you posted this. I went out today (after a little research seems quail is mo' tenda and little mo' flav) and bought some quail. txpgapro posted this and this is what I'm doin :P :P

Here's what I do with doves....Shoot em and give them to someone ..then buy a chicken to bbq.... Sorry Ive neve had a good one yet...too gamey..

That's about how I've done 'em. The jap pepper inside loses some heat during the cooking and the bacon on the outside keeps 'em moist. I've also rubbed them with olive oil first before wrapping with bacon to help keep them moist.

Try adding a real sweet, honey bbq sauce at the end, then drizzle the tequila over it pryor to serving. Let the alcohol burn out and WALA! Man I 'm hungry! :wink:

What I've usually done... Put some jalapeno, garlic and onion and wrap with bacon. Cook over coals. I wonder how Rachel would cook them :roll: ... but I guess that's a different post :lol: .

I think she likes the breasts wrapped around the little pepper. Don't know yet if she likes them sauced or not. :lol: :lol:
