I am planning on injecting a lamb leg with a melange of

lemon juice
onion
garlic
mint leaves
olive oil

I blenderized everything until liquified. Going to rub it with salt ,pepper, garlic powder. Anybody ever inject a lamb leg? Results?

Morning,

I use slivers of fresh garlic, but since I cook lamb to 125° I confine the garlic to the outermost part of the meat. Otherwise the garlic ends up un-cooked. I rub a mixture of olive oil, garlic, lemon zest, and seasoned salt on the outside.

What temps are you taking the lamb ???

I've tried putting all kinds of spice and herb mixtures on the inside surfaces of boneless legs o' lamb and they always seem to be on the undercooked side. Kind of like a dry rub that doesn't see the light of day during a butt cook. Even at 135° you might have the same situation with your injections.

I really like the flavor profile that the lemon zest and Lawry's seaseoned salt gives to lamb. And who would cook lamb without garlic ???????

Woody, you're cooking lamb for what category? Anyway, lamb's a good choice and Uncle Al is right about the garlic. Mint's a natural, but I'm kinda liking the outside vs the inside. Sounds like Al's given it a try. Rosemary and Tyme are used a lot as well.

I always figgered you would use K-Y Pepper Jelly on lamb.
