What temp you cook them =s how long-- I cook chicken hotter than most,
around 275-300, cant use time as a guage, but take them to at least 165 when read between the thigh and leg joint, I like 175 even better. good luck with your cook...

Never, ever cooked that much at one time. I'm a backyard bozo only. That said, I like 300F for chicken to get good skin and cook till I see 170F at the breast or 180F at the thigh. (Thigh temp will normally run higher during the cook.)

Yeah, I like to cook chicken hot, and I like to see 175-180 in leg quarters before I pull them.

After brining, I smoke (220*) mine for the first hour or so, then move to the hot side (325*) and finish them till 175* internal.

Hey Lalo, I found that after injecting them with some creole butter injection marinade, that you can go to 180-190 & the meat wouldn't dry out. Just my experience.
