Well, I had hoped to have pics by now, but I am too excited or pleased, about the success of my latest cookout. My buddy and I loaded up my trailer and his truck w/ my grill, 3 WSMs, and new 10x20 canopy along w/ everything else needed to accomplish bare-base cooking. Our goal was to go down to Cape Hatteras NC and cook 5 meals on the surf of Cape Hatteras. We did this last year but for about 1/2 as many as we had this year. Well, we loaded up in the rain, drove down in the rain, arrived in the rain, and woke up to the rain. Things and the radar were not looking good!! But, around 12, the sky started to clear and we found a place at the end of the hotel for the canopy. We assembled the canopy, unloaded the trailer, set up everything and commenced to heat up some bbq pork that I had frozen. Everyone who ate it loved it!!!We then rubbed down 9 racks of spares and put them on 2 WSMs. All this time, we had people just gawking at what we were doing and not believing what they were seeing. The guests had a Brinkman smoker and loved watching and learning what we were doing w/ the WSMs. Then it came time to cook 30 steaks grilled w/ charcoal on my grill. All in all, we had 9 racks of spares, 30 steaks, 14 qts of smoked baked beans w/ smoked pork in them, 10 lb of smoked sausage and corn on the cob for about 30 men. We had several who just hovered over the rib plate and ate themselves sick. And we still had plenty left over. My homemade sauce was a hit also. We then griled honey bunns over the hot coals for dessert (now that's good eats!!!). And on Sun am, we grilled(w/ gas) 5lbs of bacon and 15 lbs of sausage, scrambled eggs for the guys. I was too busy to take many pics, but I will try to get some from others. We do this once a year for the Baptist Mens group at my church and used ths as a launching for our new catering buisness. In fact, one of the visitors asked us if we would be interested in doing his daughters wedding reception of about 150. So, it was a productive weekend. :lol: :lol:

Thanks guys, as you know, it is realy rewarding when you have 30 guys all talking at the same time, then it goes quite!!! That is the best sound of all. Everyone raved about everything and it realy did turn out better than what we were hoping for.

Wow! 2 WSM's and a gasser. You had everything covered. BTW, how long did it take you to set up that 10x20 by yourself?

Two 10 x 10's with 50 lb weight plates on 2 corners each. Never had a problem! Corny, My boss was down there last week. Said the weather was pretty miserable! Good job on the cook! That is what it is all about. You can accomplish anything if you plan and set your mind to it! Woody

As far as the set up time went, it was our first time doing it so it took about 30 min figuring out what piece went where. But over all, it was pretty easy. The hotel acted as a wind block, so that helped. As far as the cost, I got twice the covered area for less than a 10x10 canopy. I know it could act as a kite, but I went w/ more bang for my buck at this time.
TGP-yea, we had the grilling covered. We hada 3rd WSM in the truck, and my gasser had a charcoal pan that I used for the steaks, and then used gas for the sausages. Dual purpose and I love it.

:wink: Dont get me wrong Corndog. I had one just like it staked down real good in my back yard for a party. I got lazy and did not take it down. One day at work I got a call from Bill next door. He wanted me to come home and get my tent out of his tree before it blew into his house. The thing was wrapped around his tree like the red stripe on a candy cane. Leason learned :lol: :lol: :lol: . Had it been a ezup I would have taken it down. :wink:

Gotcha 101, I know what you mean...and I am concerned about the "un-timely portability" of the canopy. I do have one of the cheaper 10x10 from Wal-Mart and it caught too much rain and bent some of the frames. When I use it now, I have to tie it off to something sturdy so that the canopy won't lean inward.
Woody, it was rather breezy out there this past weekend. Like I said, the rain ended around 1PM and the wind slowly died down to a gentle breeze at supper time.

Corndog, looks like you boys did good.
Fred, you go that right about cooking in inclement weather. Man, that is the best way to train for competition cooking. If you can work in the rain, contend with the rain, maintain pit temp in the rain, anything else is a breeze.
ps, Corndog, looks like you boys may be needing something a Tad Bit Bigger. I know just the place. :) Ritch

Ritch, if I recall correctly from an earlier post, you don't have a pit anymore...how's that going to help me??? :wink: :wink:
And a tad bit bigger doesn't begin to explain what we need, but you have to boil water in the pot you're given...maybe one day my friend, one day
