Through his infinite generosity, Mr. Tarjerky shared his private stash with me. Talk about good! I screwed up and gave my son some. I may not get another piece. This guy can do some jerky!

What did I say? You would love it or send it back. Am glad you got it. Sometimes the most simple way is the best. I used to make it every weekend just like that and now that it is getting cooler, I will start back. I want to try some in the smoker but I personally don't know how it can get any better than what I make in the oven. Try making some and after a few tries, you will have it down pat.

Hey Tar..think you should seriously consider using smoke sometime. You obviously got premo jerky now judging from the rants and raves..that smoke flavor liable to kick it up into outer space. If you ever want to set up a dedicated high volume smoked jerky making moochine for around 5 bucks..let me know. I have owned and constructed several and got the plans firmly affixed in my haid.

Mr. Wheel, lets hear the plans. I am for sure going to try it in the smoker with hickory wood. Who knows, maybe I won't be able to live without it. I was just going to fix it like I usually do,sans liquid smoke, and set the U shaped rack in the smoker.

Ok now this gets fairly complicated. First off you start with an old non worky ice box. Then you pokes a hole in it along the bottom and extending out the back side. You can use a long bitted drill or a .357 Magnesium pistolo works good for this task if you lives in the country. Then you mount a burner off of an electric stove (cooktop part) on the bottom. Sit it up on top of a couple of bricks if you want it fancy. Now them electric burners are 220 volts or watts or whutever and they have two loops. Then you take an el cheapo extension cord and snip off the end and you hook the burner up to 110. Meaning you screw one nekked wire to one end of the same burner loop and one nekked wire to the other end of the same loop. Then you set a pie pan on top of the burner and put a plug of wood in the pie plate. Then you hang up the marinated jerky inside the ice box..or use the existing racks if you want..plug it in and shut the door. Come back tomorrow and it will have turned into jerky. Dont try this with a hotplate cuz it gets too hot. You got to have the electric burner. Takes about 24 hrs or till it turns into shoe leather whichever comes first. Made many pounds of the stuff using this method. Eventually the seal prob need replacing on the ice box door..just go to the autoparts place and buy some sticky backed weather stripping stuff.

Paul, that would be too much like a fultime job plus the red tape. Don't want no job or anything where I have to do something at a given time.

Tarnojob, I hear ya brother. Hell anyways, no further than you are from the coast, I am sure that you would rather be out on Okrakoke(SP?), Buxton, or anywhere on S.H 12 HUH?
