View Full Version : Left over Butt.......

After our big New Years Eve bash the other day, I had plenty of leftovers... and I found what I think was the best way to deal with a whole left over butt. I threw it in the fridge and last night took it out chopped it up in 1/2" cubes or so and threw it al in a foil pan. Turned the oven to 225 and made a great vinegar sauce....3/4 c cider vin, 1/2 c applejuice, single shot of Makers Mark, 2 Tbl of TBBQR, little bit of wosteshire, and 3 Tbl of honey. After simmering the sauce for 15 min or so I poured it over the pork in the pan and stuck it the oven for 30 min or so till it got warm. I am here to tell you that was way better than any leftover "pulled pork" that I have ever eaten. Dont know if anyone else does this but dang sure was good. Sorry no pics my photographer( Michelob) didnt come over to eat the leftovers :lol:

I'm cooking a butt this weekend for lunches. I may have to cut a bit off to cube and try this. Sounds very good!

Has anyone tried the "Supper Spread" recipe given in Smoke and Spice? Sound like a good way to use up some leftover pork butt or shoulder.

Supper Spread made from leftover pork butt--source Smoke and Spice.

1/4 C unsalted butter
1 C finely chopped pork butt or picnic
2 garlic cloves, minced
1 teaspoon Worcestershire sauce
2 teaspoons minced fresh sage or 1 teaspoon dried sage

Tobasco or other hot pepper sauce to taste
Salt and coarsely ground black pepper to taste

In a saucepan melt butter. Add pork. Add 1/2 cup water, garlic, Worcectershire sauce. Simmer very low for 15-20 minutes or until liquid evaporates but pork still looks moist.

Remove from heat, mix in sage, Tobasco, salt, and pepper to taste. spoon into a small crock, cover, refrigerate untill chilled, but preferably overnight.

Let spread sit at room temperature for 10 minutes before serving. Serve with a crusty country-style white bread, toast triangles, or crackers.

Very good. Tried it on saltines, crusty bread, and Triscuits. Best however, on the pita bread chips sold at Costco. Next time, I'll try one fourth cup water and 1/4 cup of the vinegar sauce I made for the pork butt in place of the 1/2 cup water. Will certainly make for my Super Bown party.
