I asked a similar question before and i believe i got one response. I was asked by a friend what was a good price per head for a brisket, potatoe salad, rice and beans plate. He plans on feeding 400 people. I would like to hear what you guys think before I tell you what someone quoted him. I hope you guy can help. :)

Wowzers!!! 400 people is a good load. The largest I ever cooked for was about 170. i had 12 different dishes to cook and heat with only 1 helper. And I thought THAT was a lot of mouths going...

This question pops up frequently on the BBQ Forum (http://www.rbjb.com/rbjb/rbjbboard/). Just scroll down through the pages and you'll find your answer. It seems the people who hang on that forum are the hard-core comp teams and professional caterers. It's a good place to pick up some good recipes, too.

This is way beyond the scope of what your friend has in mind, but is the most recent "what to charge" thread I saw. You'll find your specific food groups prices if you search for a while. Well, up here, I would charge $12/person for 400 folks.

how much are you paying for a lb of brisket? Woody gets his cheaper than we get in Indiana because it would probably be about 14-15/person here. At 3.50/lb I would have about 1600 just wrapped up in brisket alone.
Also, you making the sides or buying them pre-made?

7-9 bucks be plenty I'd firgure. Fair pay for your time, unless ya trying to retire from one cook.
You guest can enjoy it also, without choking. Bring more gigs also.

My future father in law owns a reasturaunt/catering co. (Click the link in my sig line), and for a 2 meat, w/ 2 timmings, of their choice, he charges around $7 per plate. I help him out quite a bit, and we have done caterings from 20 ppl being the smallest, to 2500 ppl being the biggest. The 2500 people was for the Texas A&M Vet School.

I ate at the vet school bbq at A&M and it was good.. Yup the price be around 7-8 bucks....
ps.. I imagine the price has a lot to do with how much competetion you have for catering .. and in Texas BBQ caterers are a dime a dozen...

The one that was held at Shadow Canyon? If so, glad you liked it. It was a tough catering to do. I bet I made like 5 trips back to the resturaunt to get more stuff, and parking and unloading was a mess.
We did a catering last night for the A&M extension office for 120 people. Turned out good. We cooked fajitas, K-Bobs, sausage, and apple dumplins for desert.

I thank you guys for the responses and I thought the $7-8 would be about avg. Brisket in these parts run about $1.28/lb give or take $.10. This guy at work said he found a guy that would do the entire deal for $1250.00! Thats about $3.12 a person! I told him to jump on it and hope that the food is a good as the deal! :lol:

Let us know how that deal turned out when it's over. That is a mighty cheap price. It costs that much and more to eat at a fast food pit,

Now that you mention fast food bbq joints, i believe he said that "Bill Millers" qouted him $1400. for the whole thing. Thats $3.50/person! I wont be going to this party. It will take place in San Antonio this coming weekend. I'll be here cheering for the Colts!

There ain't no 'splainin some thangs. Last year Luther's catered a meal at church for $5.15 a head. Chicken, brisket, sausage, beans, potato salad, slaw, tea, 12 servers on Sunday morning.
Musta been from the advertising budget.

Is it a new guy starting out? Does he run a restaurant also? If he is running a restaurant he is probably getting a better deal than what you pay on meat for buying so much so I am sure he can afford to go that low.
Did your buddy get any samples of the food?
Bill Miller has a bbq restraurant on every major intersection in San Antonio. I tried it once but have since gone to greener pastures in my opinion.
I think someone on this forum might have said this, "don't be the cheapest, be the best". Let this gig go and find another.
