View Full Version : Fired Lucky up for some chicken.

8) Ok remember I this is only my secound cook with a WSM. I have been getting some chicken advice from Bigwheel (Thanks Jeff) and WSM advice from BBQDoug (Thanks Doug). I used Kingsford charcoal and Hickory chunks. I could not get the fire as hot as I wanted eather because I put to much hot water in the pan or just did not light enough coals. I think next time I will try lump and do evething else the same. I used a brine Big Wheel emailed me that I will not post that is Big Wheels choice :wink: great stuff though.
:lol: Now with that said it was the best chicken I ever cooked. The skin was not rubbery and just short of crispy. I was cooking at 325 and would have been happier if I had gotten the fire to 400 or better. The chicken was moist and tender with a outstanding flavor. The hickory was not to strong and not to light.
:wink: Lucky is a good little cooker and he will be doing alot of comp chickens.

Sounds like it is going to be a good little cooker. I ain't ever heard anyone say anything bad about them.

Yeah, what Thom said. Just the pan lined with foil is what I do when going for higher temps. Sometimes, I remove the pan with split chickens.
