View Full Version : My first try at real Q was a success

Well Gents, (are there any females on this board??), I promised I would get back to you all with the results after using my new SmokinTex smoker for the first time this weekend. I followed Bill's recipe for spare ribs verbatim. I was nervous as hell because my parents and my sister/brother-in-law decided to drop by for dinner also. Oh, and my son had one of his buddies over too----that's pressure. I worried for nothing because the ribs were delicious, and so easy to make in the SmokinTex--it's almost foolproof--just set the temp and walk away for 6 hours. I'm going to try a Chicken in few days, and then attempt the holy grail--baby backs. Thanks to all of you for your help and advice--this is fun!!

Great goin! Omaha huh? I was there once. Walked all over that city! I liked that Old Market area. Well, you eare hooked now! Next up, pork butt!

Great job.

You can great some great advice here. Plus, its hard to go wrong using Bill's rub as suggested. (except sometimes I use chipotle mustard in place of Woster)

WTG Bluejay. Sounds like you is now officially and firmly addicted to the bbq hobby. It a very hard habit to break..let me tell ya. Aint never heard of none who successfuly recovered. Just something about the smell of the smoke which drives otherwise rational folks plumb nuts. I have seen it in action too many times. Welcome to the fraternity. Also save a little room for chili and gumbo in your sphere of interests. Eventually gonna want to make your own sausage no doubt. All them things is linked together in some myseterious way. It also involves beer I think.

If you did spares, you will have no problem with baby backs. Do same except they do not take as long. instead of 6hrs, go 4hrs on bb. (Did I ever tell you how much I love Baby Backs)?

That reminds me, TB...guess you're wondering if the PO is on strike up here...no, but I have a real forgetful nature. Luckily Miss Kathleen put that chunk-o-cheese in the fridge to keep it much fresher since I bought it. Soon, brother...

Congrats on the ribs bluejay! I gotta fire up the smoker friday to cook up a couple of pork butts for my daighter's basketball team so now you got me thinking I'll throw some ribs on as a snack for the mrs and I.

Ain't that the truth. McDonalds just lost another customer.

Folks always want to take me to a fish place or a Q joint cuz they know I like fish and Q. I have to tell them that I can't eat it. It's not bad, it's just that my cooking makes it seem bad. Like eating a plain baked potato when you know you can have one with salt, pepper, butter, sour cream, chives, bacon bits....

QFest is a celebration of barbeque and brotherhood, held out at Bill's country house in Cistern, Texas (near Flatonia). It will make you fatter than you are now. :D

On the mass quanitites, it's BYO, so it's up to you. There's enough cooking going on, so you shouldn't have to do anything, or you can lend a hand where you like. I won't comment on the dancing girls.
