I thought I would role up a couple of Fatties and smoke em. One is A Maple Fatty with Bill Rub and the other is a Hot Fatty with TEXAS Rib Ranger Hot Rub. Pics in about 6 hours.

I did a Maple Fatty was TOO much flavor Maybe sage sausage would be better

8) This is the first time I smoked a Fatty on a Pit. Man I gotta tell you guys I love these Nu-Temp 701 and 752s Wireless probes are the way to go. Mr Lucky is chugging away at 235 while I sit at the computer. This cook I am using Pecan Chunks with a mix of BGE Lump and Kingsford. Much better temp control when you mix the 2.

Well hope yall dont get any short term memory loss or birth defects from smoking them fatties. Yall gonna be hongry later most likely. Are you gonna make any thing to eat for when the munchies attack? :shock:

Show you in a minute. They are logs of breakfast sausage roled in rub and smoked 3 hours at 220 then wrapped in foil for 1 hour then rested in a cooler for one hour. For the record Maple sausage did not taste as good as the Hot.

Pardon my stupidy, but how do you prepare a fatty? Do you simply take a roll of sausage like a Jimmy Deans or comparable and then roll it in rub and smoke per your directions? Or do you break it apart and do anything with it before rolling back up and rubbing?

Sounds interesting.....

How is it served?

I just take it out of the package and smoke for about 2-1/2 hours. I turn mine midway. I have never rolled in rub or foiled. So far I have only used Jimmy Dean Hot and Spicy which is great. When I go on vacation to NC, I will get the 2lb fatty at Sams.

Dittos..first I heard of the rolling in rub and tinfoil routine myself. Fella that splained me how to do it just bust it out of the plastic and sit it in there. I did not know there was some other way. Owens works best. It generally considered a snacker to build up the strength of the cookies waiting for the big meats to get done.

The best is Jimmy Dean Hot rolled in Texas Rib Ranger Hot. You do not have to foil it if you do not want to. Stay away from Maple it was like having 2 layers of sweet. Next time A Fatty glazed with Texas Pepper Jelly and Brisket Blend or Steak seasoning. I would stick with Hot or Sage sausages. The important thing is to get the sausage to 170. I saw the idea posted on a couple of other sites and thought I would give it a try it was good. I had to do something I am out of Slovaceks.

Yup it was PorkyPigs post got me thinking about it. I have always tossed sausage patties on my cooker as cooks treat or breakfast at cook offs. I just never though of rubbing the roles of sausage whole :wink:

Has anyone tried bulk Italian sausage for fatties? Safeway sells it in pound-sized logs in the Baltimore-DC area. Far less fat than JD brand.

My cardiologist will scold me just for reading this thread! :twisted:

I'll bring some, but not getting it now. Be burnt by then. But I will get some to use for next few weeks. Use it in my baked beans insted of my good sausage :wink: Most won't know the difference.

Sausage gravy made with Safeway Italian bulk sausage is outta this world. Just gotta remember to put sherry,good sherry, in to deglaze the skillet after cooking the sausage. Then proceed. Make a man forget all about them 70 virgins.

Now I don't know whether to make fatties or sausage gravy tomorrow.

Just listening to these talks is raising my cholesterol...When I think of the saturated fat in those things-or even a BITE of one of them. I know...I know...I am overweight and not everyone else is...but I have to watch my saturated fats. I really try to keep my daily intake to somewhere around 12 grams. That's like one bite of a fatty, boys... :shock:
