Just fired up the pit to cook 72 briskets for a catering in the morning, along with 320# of beans, and a whole bunch of potato salad. Looks like its gonna be a long night of beer drinking!!!!!

I would think the potato salad would be more weight than the beans... 2 to 1. That's my guess :? .

Humm. 72 briskets yielding, let's say 8 lbs of meat, and each person will get 1/3 lb = 1728 persons. Now if they get 1/2 lb, then we're only talking about 1152 persons. Figuring a dollop of potato salad vs. a ladle of beans... I still think we're talking twice as much weight in potato salad :shock: .
I hope Greaser has the time to post some figures, but he might be busy.

I will pay for a pic of that pit with 72 briskets on it. I just have got to see the size of that Bad Boy!!!!!
I have a little Ol' Lang 84 and it would take about 5 loads to smoke that many briskets

So if it IS double the beans, that'll make the P.S. weigh 640...that's a Sumo wrestler...and the 320 beans...there's a half-ton FOR SURE.

If you haven't checked out the pictures on the web site on Greaser's post, it looks like they've got a real nice place. I believe he said it was his future father-in-law's. I don't know what type of pit he's using, but it might be a built in. Snook is about a two hour drive from me, but some Saturday I might go and check them out.

Most of the time, I figure 10 lbs of dry pintos will feed 100 folks. I think that they may need some more meat to go with those beans. :shock:

Well, just sent all the briskets to the event. This was a catering for Hope Pregnency center in College Station. It is for an estimated 1500 people. We do this deal every year. We charge them for the food, but we donate our time. We cook all the food and deliver it, and they cut the meat, and serve it. We enjoy doing it, because its for a great cause.
As far as the pit, I wish we had a pit that accomodate that much beef. We actually used a total of 6 pits. We are lucky enough to have a few friends that also do cook offs that are happy to let us use thier pits as well. Snook is a great town, and the people here will bend over backwards to help each other out.
Thanks for the complements on the resturaunt pics. Like I stated before, it belongs to my fiance's dad, and we will end up taking it over someday. As of now, My fiance manages all the wait staff, and my future father inlaw manages everything else, even the job of lead cook in the kitchen. I help out on the busy nights (Thursday, Friday, and all day Saturday), I would prolly be there more ofter if I didnt have my own buisness to take care of.

Oh heck yea I did. As far as the pit performance, I'd have to say the resturaunt pit worked better for me, mainly because I was use to using it. That is also the pit we use for cook offs.
Glad it all turned out for ya Greaser! 8) Sounds like a good cause you put in alot of effort for. The thought did cross my mind ya proally had more than one cooker. Only one I ever saw (pictures) that could proally hold that many briskets at once would be Ritch's (Gator Pit) "The Texas Legend." Anyhoo, congrats on a job well done! 8) 8)
