This is my first cook in a while since work has kept me pretty busy lately. :( Threw some spares on R2 at 12:15 today. I love this little cooker! :roll: Took me about an hour to get em ready from prep to lightin the cooker! The pics show the process up to put'em on. Maybe some of you new guys will see sumptin that will help ya out! :wink: BTW I'll take this time ta welcome all the new folks to the asylum that I have missed! :oops: Anyhoo, R2 is holdin at 230* with about an hour ta go before I pull em ta foil usin the 3-2-1 method. I'll add more pics to the same album as the cook progresses. Right now though it's time ta grab another cold Michelob and step outside ta enjoy this beautiful Florida weather! :shock: A little overcast but in the mid 70's all my yankee bruthas!! :P :P

70's? what's that like...I forget. We seem to go from 30's to 90's and humid here anymore. Been a hit or miss type of winter here. Not bad for January though :wink:
I had been thinking of using mustard on my next batch of spares. I loved the bark it made on a pork shoulder.

Ok here are the spares after part one of the 3-2-1 method! Top rack spares have a tan line...bottom rack looks better! :? What's up with that? :shock: :? Foiled with some apple juice and back on for 2 more hours. Will glaze with pineapple/habenero tpj! Damn, I'm hungry! :wink:

Lookin pretty darned good. A little too cold to do any Q'n here today, it's about 83 degrees F cooler here than your 70F. I think I will just stay inside and watch Pittsburg beat up the Broncos.

Mic, that's quite a pictorial tutorial you put on...thank you from all us Yankees...those ribs looked real good. I gotta talk to my brother in law about Q...I think he just does grilling stuff...not even sure about that. We'll be down there arlier than I thought. Me wifey has reversed the order of the trip, so we're in Jax on the evening of Sun Feb 19th...that's the LATEST final word :wink: :wink: :wink: Did I PM you my cell #? forgot...

HeyMichelob, Hey you are right buddy. I-10 is a 2 way interstate HWY. & yes I do know the way to J-ville all to well. & if possible, I would love to make a run that way. I miss going to Fla. & miss seeing my "Q" brothers as well. Damn I can't wait 'till "Q"fest III.

:lol: Mic I like that coffee can trick I might try that next time. Do have one question though thats seems like alot of wood for the WSM. Did you find the smoke to strong on those ribs? The reason I ask is I have notice on a couple of WSM cooks that the smoke flavor is a bit to strong.

Jim, yeah there was too much wood! I used apple on this cook but I don't mind a heavy smoke flavor...now the Mrs. thought the smoke was a bit strong for her liking! :oops: You're right though...should cut the wood back a notch!

:lol: :lol: Naw, dude! The kettle served only ta hold R2's top rack whilst I pulled out his lower rack ta foil those spares and put'em back on!! :roll: Have used the kettle though when more than four racks was needed! :wink:

TL, I'm eatin leftover ribs right now! :shock: Still yummy! :roll: :wink:

Paul, don't be surprised if'n I take ya up on that offer! 8)

Mic, how did it work out by not pulling the membranes? Any big difference?
