Fired up Lil Orpan Annie (WSM) for the first time sunday. Used the minion method. Found out using chips is not the way to go. Put on some spares up top, with a butt down below. I was really impressed how well and how long she maintained heat. Didn't get near the smoke flavor I wanted, but that was my fault for using chips instead of chunks. Ribs turned out great, finished with tpj pineapple sauce. Pork butt took a litttle longer than usual. It had been frozen, I put in fridge fri morn but was not completely thawed by sun morn. Foiled and left on for two hours to finish. Need to pull and set aside for supper tonight. Overall once I get used to the WSM, I think I'll like her a lot.

You are going to love your WSM. I did a great brisket over night the other day. I love the set it and forget it mode. But, I do need more size every now and then.

Maybe a link with some details would suffice...you know darn well that everyone's gonna ask anyhow :wink:
