Ok so I was following that post on chicken thighs and looking at the pictures Kpigout and Zeeman had posted, I had to try them.
A friend of mine was cooking what he called a whole uncooked ham.
He required my company and advise so I figured...there's a pit that's already started so I might as well try the thighs.
I have to say that those thighs were probably the best darned yardbird I've ever tasted. Even the people there that claimed to not be very hungry couldn't get enough of them.
I used jalapeno jack cheese in them due to the fact that they were a little on the small side but since I will be doing these more often, I will try different methods.
Pictures are found here http://www.kodakgallery.com/Slideshow.jsp?mode=fromshare&Uc=8isc96zt.419r0ey1&Uy=-vpamq6&Ux=0
By the way...the "whole uncooked ham" was really tasty too

They are even better than they look in the pics!
I'm not a huge fan of dark meat either.
I cooked them kind of close to the offsets heat source and they finished up in about an hour and a half. Crisped up the bacon just right too.
I think I'm going to join the ranks of catering too because after I cooked these, someone asked me to do some brisket and chicken thighs for a 1st birthday party. Problem is..the party is in Feb. and as nice as it's been here in Jan., I don't think it'll last

Vinman,
Could you post the recipe? I'm new to the forum and didn't see the other post. Maybe I need to do a search. Did you take the meat off the bone of the thighs? It looks like you did.

Hey Vin, best looking thighs this side of Linda Carter...(TV's Wonder Woman for all you pups...)
I've been stuffing them for a few years and they always come out perfect. My hat is off to Zeeman for coming up with the bacon addition...or should I say addiction. Well done!!!

Thanks for posting that Kpigout!
I was busy. That recipe should answer any questions.
I bought the thighs already prepped...that's why some of them were kinda small. The small pieces worked out ok for me because I just used 2 pieces and sandwiched everything around the cheese and onion.
Funny how posting some pics of something different brings out the "those are on my list" comments.
I love this place!

Not me, brother vin...I don't like Spam too much, and I like Brussel Sprouts even less...a whole lot less. When i was a kid I called them 'Brussel Snouts'
