:D I finally did it. I got the pork for the meeting done with a half way done smoker that I was building, and everyone thought it was great. I cooked it about 7 hours. I cooked a small hog and a whole hindquarter.

:!: :!: This weekend I finished my smoker and I cooked some ribs pork chops and a front sholder of a hog. When payday comes I want to do a brisket. My smoker is 5' long and will hold a whole hog, sheep, or about 6-8 briskets.

Talking about sheep does anyone cook lamb anymore. We lived on a farm and my dad used to barbeque lamb all of the time.

I can't imagine cooking a whole hog - good work.

Lamb? Yeah. I love it, but can't get the rest of the family to eat it. I do legs mostly, either smoked or rotis. However, my favorite is lamb in stews.

As for that lamb, it's one of my favorite meats. Now, you got me thinking about this weekend.

Yes I do smoke lamb and it is awesome. Goat is good too Bill made some at Bass Pro Cook Off in Katty last spring. Do the legs on the Pit save the chops for the grill.

Talking to my wife this evening since we have no show till Thursday, and in talking food, she reminded me that we had smoked ostrich at a 'trendoid' restaurant in Jersey a few years ago. (people in NJ say New Jersey...people in NY just say Jersey)

The restaurant was not a smokehouse, so they either used a steamer or a regular oven to cook it, but I guess with liquid smoke. The texture reminded me of lamb, and I liked it, but it was VERY expensive...I think that one entree was $45...but it was for my birthday so I didn't care. But I would have it again just for the flavor.

Hmmm.....I thinks we needs a mint TPJ for lamb :idea: I like lamb shanks, gyros, shish kabob, indian curries, well any ol way works for me.

I was given some ostrich jerky last year, but I think the teens around here finished it off before I got some. They said it was great.

Well, TB the ostrich taste good. It was a steak and I had no idea what to expect. But the consistency reminded me a lot of lamb- it had some more give than beef...y'know what I mean? Not as dense. I also think that it was cooke properly- it was not raw or dried. Except for the price, my first experience with Ostrich was a good one.

I like that ostrich. There are a number of ostrich "ranches" around here, so it's not too hard to find. It still costs a pretty penny, though. It is nice and lean, while still tender and not gamey. I get an ostrich burger every now and then and enjoy it.

:oops: I got the picture on but it is to small? How do I enlarge it a little so you can see the details? Any way I did a brisket on Monday and it turned out great. Barbequing I know something about, posting pictures nada.

Hey Rennie. Once you've uploaded the pictures, choose the option to share pictures. Share them to your own email. Go to your email and open the link to the pictures. Once on the page it opens, copy and paste that url into the post. When you preview the post, try clicking on the link. If it works on the preview, it will work once submitted. If not, keep messing with it until it works, them submit. Clear as mud :? ?

Rennie, I had the same trouble when I first was posting pics. The url number will be at the bottom left hand side of the email that you send to yourself. It will say "if you can't see these pictures blah, blah, blah". There will be a series of numbers after a http// sign. Copy and paste that number to your thread on the forum. You also need to check the box on the share pic. gallery saying that people don't have to sign in to view your pics. That should take care of the posting pics problems. Open your web browser twice, once for posting thread on forum and the other for copying and posting url number from your emails... :wink:
