I did these shrimps week before last while trying different sauces to see which did the best on one of my favorite ways of cooking shrimp. I love to eat shrimps that have been done this way...I take deheaded jumbo shrimps 12 to 16 count per pound, peel, devein and rinse well, dry them, then season with a dose of your favorite seasoning, this was done with Bill's rub. Lay a finger sized chunk of your favorite cheese, (cheddar, Monterrey etc.) along the back curve and a slice of fresh jalapeno pepper added to it, roll up in a strip of thin sliced cheap bacon and secure with toothpick. The bacon should completely cover the shrimp since it will help to protect the shrimp from burninging plus hold in the cheese as it melts. Dust again with seasoning, then chill well before grilling or hot smoking in pit. Glaze with your favorite sauce...... A couple of dozen of these little jewels along with a cold beverage of your choice and a big smile to pass the time of day with is hard to beat. :wink: All 3 of the different sauces tried were great on these shrimps, they all seemed to compliment each other. Did I mention I loved shrimps grilled or smoked this way? :lol:

Well, Santa...now that you've come up for air...glad to see you back.

Gotta say that there's not a bad thing in that little roll-up that you did. Shrimp, cheese, Jap, bacon, TPJ...a balanced meal in my book...and one combo I gotta try soon.

Mmmmmmmm.....Sounds like a Bacon-wrapped Super Bowl party menu...

I have been thinking of these as they make something similar at Papadeux's. Your look better.

How can you eat them lil things, they look so comfortable sleeping all wraped up in that bacon.

Boy I hope there ain't no shrimp sellers on the roadside this afternoon.
Tee ain't got the ashes out of her oven from the week thigh cook :oops:

Those shrimp look wonderful. Great idea about having a variety of flavors. Makes a great excuse for "trying another one"! 8)

Why Santa, I was thinkin "swimps" myself this weekend but I did a wonderful Thai Masaman Curry with them big swimps,green beans, bell pepper, pea pods, onions and peanuts with Jasmine rice. mmmmmmmmm swimps!

Well, I convinced Madame Kathleen that we should have shrimp tomorrow. Should done it today as it was 60 degrees this afternoon. People in town werre in shorts and t-shirts.
The deal is that I cook and she cleans up...I'll go for that...

I got a phone call from wife Kathy from work that she'd be real late home, as she had to correct mid-term tests and put results into the computer at work. So the Shrimp idea went out the door for tonight. Insead I just cooked some boneless skinless chicken breasts that I sliced and stuffed with figs and prunes, onions, red peppers, and spinach. Sprinkled with some of Bill's rub and in a covered pyrex with some white wine medium.

They turned out good, and stayed very warm till she came home.

They look great! Have you ever tried using prosciutto instead of the bacon? I have used this on shrimp and scallops and it taste great. Just watch what seasoning you use, because the prosciutto adds enough salt on it's own.
