Well, guys on Sunday I made 3 racks of babybacks in my SmokinTex for the first time and they were so good. I ate so many I wasn't even hungry for breakfast this morning. I need to post the pictures if I can figure out how. I'll give a quick rundown of what I did and you experts let me know if you see any time-wasting steps or suggestions for further improvement. Thanks.

1. Applied Worcester sauce and Bill's rub to the ribs, wrapped in cellophane and put in the fridge for 4 hours
2. Set the SmokinTex at 240, threw in some cherry wood, and cooked for two hours
3. After 2 hours, sprayed with apples juice, and wrapped them in foil for one hour.
4. Unwrapped the meat, sprayed again with apple juice and put them back in the smoker for 50 minutes--I also added a piecce of hickory to the smoker box.
5. Applied some Sweet Baby Rays sauce for last 10 minutes
6. Let the ribs sit in a cooler for 10 minutes
7. Consumed vast quantities of meat at an alarming rate

The only thing I would add Bluejay is several cold beverages of choice for cleansing the palate before the next rib and lots of papertowels to wipe one's face on... :wink: :lol:

I would caution you to correct #7...it should NOT be done at an alarming rate...unless someone else is with you...

Item #1. I , Tarrib, have found no difference in letting them sit anytime in the fridge.. I, Tarrib think you are just wasting your time wrapping and letting them sit in the reefer. I take my ribs, rub them down with mustard and then put on the Tejas BBQ Rub, and then put on the pit. I have also mixed the Tejas BBQ Rub with the mustard and rubbed them down with that.

Item # 5, Next time, try adding some Tejas Pepper Jelly of your choice to the bbq sauce or just rub them with some of it.( I favor pineapple habanero)

Darn, I'm tired :lol: All sounds good cept ya wasted 10 minutes when we coulda been eatin dem ribs. Thin baby rays just a touch with some TPJ, give it a try.

I'm with TRR in that I see no reason to put them back in the fridge for four hours. Just rub those ribs while you're waiting for the fire to come up, and then toss them in the pit after it has.

I agree -skip the frig for four hours- just rub and throw into the smoker.NOW as far as letting them sit in the reefer- -- that sounds like a real good idea :lol: :lol: What kind of reefer was that Panama Red or..................... :shock:

I have some baby backs as well as some beef backs in the freeze right now...still haven't tried any pepper jelly yet. I do have a jar that I got for X-mas and on everyone in here's suggestion, I'm going to try it :roll:
Has anyone tried beef backs? Do I assume they'll cook the same as baby backs?

I have some beef backs in the freezer(really cold reefer) and have not tried to cook any yet. It is my understanding that they generally take longer than baby backs and can be "fickle" at times to get tender. Will find out soon.

Tar River Rat , I've never found that 4 hr. frig deal to do anything either. Cook them beef ribs the same way as BB. They have more fat in them, so keep an eye on them.

Bad Santa, you are correct in that a cold beverage was needed.

Maybe I'll just have to watch and sample them then huh.
I have always had my beef ribs already cut and I have cooked them until they're pretty tender but never on the pit.
Maybe that'll have to be my next thread? :lol:
