View Full Version : Will fish stink up my smoker?

I want to try smoking some fish this weekend, and I'm worried I won't be able to get the fish smell out of my smoker--an insulated SmokinTex electric smoker. What do you guys think? I'll probably take a pass if I have to give the smoker a thorough cleaning after I smoke fish. Thanks.

Bluejay, I've never had a problem with the fish smell afterwards, tho' I usually do it on an offset. I now place the fish on an enameled veggie rack designed for grilling, I use to just place on sheet of foil spayed with Pam with holes poked in it to allow smoke and juices to pass through. Most of the juices dried out on the foil. Could place an aluminum drip pan underneath rack to catch drips so it would not adhere to surface of smoker, therefore no juices in smoker to smell.

I do Salmon all the time and have never had any trouble. If you are worried place a aluminum pan under the wrack were you plan on doing the fish to catch the oils if any that come out of the fish.

I smoke salmon and even Steelhead all the time and never have a problem. If you do notice any residual smell, I would suggest rinsing it out with Summer's Eve or Massangil :wink:

Seriously, fresh fish does not smell fishy. If it does, or the eyes are cloudy, it's old. It should have a clean smell, and the eyes, if whole, should be clear.
If it don't smell before cooking, it ain't gonna smell after.

Actually, I'm just funny , in a weird sorta way! I disagree about salmon and steelhead not stinking! They both have an inherent stink that comes from their fat whether they are fresh or not!

I smoke fish on occasion and have never noticed a bad smell in the pit afterwards. And it's true that you should NEVER buy fish that smells 'fishy'. I also use a drip pan under the fish, for the liquid and in case an occasional fragment falls off the edge of the fish. I use this very tightly woven stainless steel rack-almost like screening, that i got somewhere :?: thru the years, but i give it a little Pam spray, and it works great.

I gotta agree with Woody on tha salmon have'n a odaire about itself....before cookin an after. There's a difference between a fish smellin' like a fish, an a fish smellin' fishy/stinky. Jus like chicken has its own fragrance.....cuz when chicken smells chickeny.....you noe its bad! :shock: When its not bad, you kin smell what a good chicken shood smell like. :roll: :P

With the amount of smoke that these pits put out and under pressure, the smell of the fish is not a issue for me.

PS, never had a stinky pit from smoking catfish, salmon, snapper, shrimp, etc.

Well I tried to smoke a salmon on Fred about 1998 and it still still smells like dead fish in there on a hot day in August. I skip that procedure if it was me. Get yourself a NB Universal Water Smoker and reserve that for stinky critters..like fish and javelinos..possums etc. Just trying to help you skip some pain and misery. It sorta like a car which has been used for sewercide out in the country in the warm months. The smell dont never come out as far as I can tell. You can buy them kinda cars cheap ya know?
