I remember sum conversashun at QFest II bout brisket preference..sum liked usin Choice, sum liked Select.

Duz anybodee remember whut John Fullilove (Smitty's grandson) over at Smitty's sed he used? I never paid attention ta tha brisket I wuz buyin' (usualee from Wallace World) whether it wuz Choice or Select.
But I remember thinkin ta myself that I'll start buyin tha same thing he (John) buys. :wink:

Thoze stakes were so humongous....I don't remember seein' anything else on my plate....cept tha gravy. :P

They mite let us back in there...but I'm shur they'll seperate us in groups of 3-4. :twisted:

HeyBucklie, i got google so now i noe,it's a Texas thing,seems you cook it like fried chicken of old,then you make a sauce,always heard about this but never got curious enough.think i'l try making it.

Z that would have been my last guess,we have some butcher shops here also,there's one place makes great roast beef,also every thursday there's something called rabbit,it's a pork meatloaf,the best!

I don't know what it was. First one I ever had, and for sure not the last :wink:
Fork tender, really nice size, fried golden brown, covered with the most delectbable, velvety smooth, savory, eye appealing, scrumptious, not to thin and not to thick wonderful White Gravy with a serving of broccoli on the side which really made the plate a thing of art. I took one bite or two and had to get a picture to frame. The rest is history :lol: :wink:

That's the drawback to cooking over a bed of cowchips....makes your hands turn black cause of the high heat.. :wink:

Dat chicken fried steak plate looks like mine after I was done eatin' all I could. Like Bucky said, there ain't no plate to see if you order the regular size and not the small one.
