View Full Version : Texas BBQ Rub - overnight?

Hi Folks -
Received my order of Texas BBQ Rub and Brisket Rub, and now that the weather here in Pennsylvania has warmed up a little, I am chompin' at the bit to put some ribs and brisket on the pit. I placed my order over the phone and had the opportunity to speak with Bill - great guy! Would love to meet him someday.
In the past I have always applied my rub a day in advance and let sit in the frig overnight. I printed Bill's instructions for ribs, brisket, and chicken, and apparently he does not do this. Would it cause a problem if I gave the meat an over-nighter?

You don't have to put it on overnight, but it won't hurt at all to do it.

Yo Ritch. Look here if you wanna meet Bill sometime as well as the rest of this Motley Crew, just be in Cistern, Tx. around the 1st weekend in November. I've found that any more than an hour on the meat is just too much time wasted. Seems to work it's magic in just under 15 minutes in my opinion.

X3. I've tried the overnighter, and can't tell the diference using the rub. Now with something stronger I might be inclined to try overnight again.

Thanks to all for their tips and feedback. Woodman asks what I am cooking on. Several years ago I purchased a Brinkman pit, but now that I am retired I am looking for something a little larger, perhaps mobile. I have been reading with great interest the thread on Klose/Gator. So, Woodman, you're a resident of Willoughby. Had a friend that attended Case who lived in your town, so I have had the opportunity to visit. If you're ever up around this way.....

I agree with all the 'X's here. I always thought that rubs did the flavorizing whereas the liquids did the tenderizing.

Thanks for da invite Woody, do appreciate dat 8) But ya may need to start without me if that's ok. 17 hour ride, one way, for me. With vacation only a few weeks after your party I can't take da extra time off. Really sorry bout dat, I bet it's going to be something to remember.

The food editor of the Lake County paper is writing an article on me. I need a live action cook and have nothing scheduled until Memorial Day. She cannot get a photog on the Holiday so......... Bring whatever you want!

Wow...that sounds like a GREAT deal for you. I have 'Deathtrap' opening on May 12, so I cannot make it...

To make it even more tempting, I'll let you borrow the Sopranos dvd's and you can put in your order for brisket (I'm always going on a brisket run).
People have just been asking me "are you going for brisket? Can you get me a couple?" I figure if they give me gas $'s then oh well.
Then again, I don't even know if woodman likes you either :shock:

So what's the consensus here on overnight for Bill's Rub? I am cooking 2 choice flats from Sam's and was going to wooster and rub them tonight then poor some more rub on them in the morning before I throw them on the smoker. Is it possible to over rub a smaller piece of brisket like that, or to "Over spice" it like George's dad said in Seinfeld. :D

Most of us use the product because it works ,saves time and tastes dang good.
