Hey people.you too Santa.I think I finally got the pics to work.I never could get Kodak to work so I am using ImageCave.Whatever the heck that is.
This is the feed I put on last weekend for my Bro in Laws B-Day.
I put the beef on at 9am and cooked it till 4pm and then wrapped it at 184F.I left it on till 645 and put it in the cooler at 208F.Also at 6pm I put the bird in the uprite until I took the bird off and then put it on the main grill till 815.
I also made the homemade sauce and used it to wrap 1 brisket and also served it.Hey!they are stillll talking about that sauce.
I did have a little problem relating meat temps to cooking times,but it all worked out.They were still having a cool one at 7pm(my original serving time) so they were really ready to eat at 830.

Yeah, they look good, and yeah, I'm jealous of the pond in the background...but I just can't shake that deja vu stuff about these pix...something about the one pix slightly out of focus.
OK...I'm over that...so you gotta tell us...how did the brisket taste???
And what temp did you have the pit at for the cook?

Hello again,and thanks for all of the input.The sauce in the pics is Bills recipe.I used all of the ingredients including the pinapple juice.Boy was it a hit.I cooked the briskets as close as I could to 225.We had a pretty good north wind which is on the end opposite my firebox.It seemed to affect my efforts to control the temp.I had to fight it most of the time.I did manage to keep it close in the 225 range with it going down to 150 up close to 300.I may not have got my coals up enough before I started to cook.Anyway the briskets were really good flavored and not tuff or dry at all.as the pics show.That yard bird was really good and moist too.I don't know why the pics turned out blurry,unless it was because that Miller was making my vision come in and out after all of that pressure I was under.
The place where we were at is my place (2 acres) on the South Concho river.The only river that flows north from springs that we have ever heard of.It is hard to come home from down there.The pit we use is in fact a Lyfetime which is made in Uvalde,TX.We bought it back in I think 82 for my father in law that since passed.The old pit has seen it's share of grub and has held up well.We had to weld a new rim on the fire box lid last summer though.We got a 10 inch rain a few years ago and when I got down there the pit was sitting in 2 foot of water on the uprite,but that was as far as it got.I bought my bro in laws a new smaller 16 inch Lyfetime this last weekend that we will use to cook steaks and burgers on.It is the camp style with no offset box.I will post pics on it later.

Hey Thom,I may check out the QFest3.That would be a good time to ride my chopper down there.River Rat the river is fed by springs and varies 2 or 3 inches unless we get a lot of rain,and then she comes out of her banks.There has been up to 3 feet of water rite where the pit is sitting.We really need some rain now,but not that much.Maybe 5 or 6 inches.Makes quite a mess sometimes when the riv does get to high.

with A. Bryants sause That was a surprise

Yep, I thought that was a Lyfe Tyme pit. Noticed the mesquite, too. An ol' boy from San Angelo is gonna know how to cook with mesquite :wink:
