I was thinking of doing a chuck roast along with fish this weekend do you guys have any advice on how either. I have never done them before.

I love smoking chuck roast. I get the fattest boneless roast I can find, crank the smoker up to 250, apply rub and toss the roast on.

Can't really cook a chuck roast by temp; so many different muscles. I find that a good rule of thumb is 3 hrs/lb. That may seem like a long time, but it isn't. The roast will come out like pulled pork, only it's shredded beef. And the flavor!! Oh man!

2/3 of the way through the cook, foil that roast and cook to the end. Example: a 3 lb roast, cook for 6 hours nekkid, and 3 hours in foil. Step back when you open that foil, 'cause you're in for an aroma overload.

Try using chuck roast for speides too. This is a real good recipe right here. Yankees love them thangs. Now I would not want to use some old grass fed select Jersey Bull on this deal. CAB is on sale a lot.

Good meat is hard to find..I agree with you vociferously..if that be a real word of course. Ya know if we talking of spedies here perhaps..old pal gets the jaunine marinade of the place which invented them thangs..hand delivered to his door in gallon jugs from the fella in the brown truck. Say at the price he buys it is cheaper than making it yourself and tastes mo betta to boot.
