Planning on buying some, just wanted to know which is the hottest hag or jap? Wife and daughters are not too crazy about the real hot stuff.

You can't go wrong with pineapple/habenaro or apple/jalepano. IMO they could be hotter but some say they are already to hot. I also really like the Texas Passion flavor, especially on brisket. ah hell, they're all good. :D

Just gonna have to buy some and try some. 8)

Ahhh man..slather you up some Berry Medly with some crunchy peanut butter on wholewheat toast with a big cold glass a moo on the side. Them wimmen will think they has done went to paradise. I'm getting ravenous just thinking about it.

The Habanero is naturally hotter than the Jalapeno. But when they are exposed to pit or oven heat, their spicy heat dissipates and it becomes more FLAVOR than heat. Yes you will feel some heat in your mouth, but unless you are REALLY sensitive to spicy heat, then it's not gonna send you into a lunge for the ice cream to cool it.

I fairly often spoon the jalapeno jellies out of the jar and into my trap.

Last 2 days I used the blueberry Jap on a plain chunk-o-cheese and again on a chunk of cheesecake. Use Pineapple Habanero on some chicken parts in the oven.

Hey SD, to me the hab is just a tad more stout, but not much. That's just me tho. I like both of them. But then again what else would one expect from a coon ***? :lol: :lol: Hey it's all good.

I hear ya, SD. I LOVE the pipeapple / habanero, but it is too much for my little ones. I agree with those that say it mellows out in the pit, but there is definitely still some heat there. They need to get crackin' on the pineapple / jalapeno version.

My family didn't like the hot stuff but once the TPJ's came in we can't have pork without them looking for the apple/jalapeno.

No kidding about that. Anyone who can go from "I ain't f'n around with no f'n rhubarb" to "Hey, we just might have some rhubarb stuff coming" in the space of five months is someone with an open mind and ear for his customers.

The problem I am having with Rhubarb is simple ... there are two groups out there ... one says the Rhubarb is great ... others say I it should be Strawberry Rhubarb ... now I like making this stuff a lot, but the addition of more and more flavors is tough. What might have to happen is rotate new flavors in and old flavors out ... like the ice cream places do ...

Anyway thats the latest on the Rhubarb front .... now the new ultra secret Strawberry Pecan Jalapeno ... may not be a secret much longer ...

anyone have any thoughts about that flavor ????

Could you just do specialty flavors while in season? or is everything always in season in your country?

We are heading into the strawberry and rhubarb seasons here so it would make sense to make the rhubarb pepper jelly now for a limited time while it is in season and then on to the next flavor until next year.

You could even retire them like beanie babies so that we could stock up and become rich like all of those beanie baby collectors.

I understand that the majority of flavors so far are you main sellers but adding in a specialty flavor of the month/quarter might generate some interest/sales while limiting the increased workload.

I've mixed the TPJ Strawberry Jap. with Strawberry/Rhubarb perserves with very good results....so it's not a problem for me which ever flavor you decide on to go with. Could make a do-it-yorsef kit, and sell them the Strawberry Jalapeno Jelly and a spoon, to mix the TPJ with the customer's choice of either the straight rhubarb or a mixture of the strawberry/rhubarb....no problem deciding which flavor to make and everybody is happy with their own "handmade personsalized" jelly.

I really like the seasonal approach, but I'm from the SF Bay Area (where seasonality is all the rage) so I'm a bit biased. Even better would be if you could establish a relationship with a good farm (preferably organic, sustainable, family run, etc.) to supply you with the seasonal ingredients.

Oh, and strawberry pecan jalepeno sounds interesting - does it taste at all like pecan pie? If so I'm all for it.

Rhubarb vs. Strawberry Rhubarb: well, you already sell strawberry products, why not just go with rhubarb and people can mix them if they like them together.

As long as we're spouting off flavor ideas, how about Mint? Would be great with lamb...

Now that I'm back from work I have a few minutes to think this thru. My thought is that I don't like the blended tastes that come from different textures. For instance, the strawberry-pecan idea. I don't like the THOUGHT of the two tastes together. I know that sounds strange, but it's the same reasoning that cucumbers remind me of people with freckles, which reminds me of Hoffman Soda. HUH? Well, to me it makes sense.

I don't like it when someone says, 'put some nuts in your ice cream, or yogurt, you'll love it.' I'll HATE it, because the textures are dissimilar to me. I just have my mouth, tongue, and taste buds ready for the cold, creamy smoothness of ice cream, and then -BLAM- I have to work at chewing something!!! So when someone asks me to try their tomato sauce with pine nuts in it, I say nuts to that. I just don't like it.

So it might not be rational because with Texana's TPJ it's just FLAVOR that will be in the jar and not TEXTURE. So I'm willing to try it, but I am prejudiced.

Next: Seasonal is a great idea. But phasing some flavor out FOREVER is a BAD idea. How often have we FINALLY found something that works correctly or tastes just perfect, and then the next month it is discontinued. I want to kill when that happens...it's a plot against us...

As far as Strawberry-Rhubarb vs. just Rhubarb...I say it's up to you in the making of it. I have been the main Cheerleader for this flavor from TPJ, but frankly it's the Rhubarb that makes the taste unique. And considering that you pride yourself in making a unique prduct line, I think that you will sell enough of the Rhubarb line to make it worthwhile.

Then you can say, 'Thanks, DB' and I'll mumble something incoherent...

Now that was way more than 2 cents...
