Cool lil thing , my 13 yr old son got his first elk last season and after we cut and wrapped it i started thinking about the leg bones and what i could do with them,well i decided to smoke all the big bones and we gave them to all our friends with dogs for xmas. they all loved it! the dogs that is :wink:

Next time try making some Elk Stock.

I'll try it if you wanna send me some bones. I'm serious about this. I learned about making stock and keeping it for a long time between refrigeration and reheating.

But altho I offered...I gotta freely admit never having eaten or heard of eating elk. Closest i came to an Elk was in Colorado as it walked right past us along a trail...about 10 feet away.

What does it taste like? I assume very related to venison.

UPDATE: I found an Elk Soup recipe in some old cookbook:

Knuckle Bone and meat, 2 1/2 to 3 lbs.
2 qts cold water
1 large onion, quartered
3/4 cup diced celery
1 cup diced carrots
4 tsp salt
1/4 tsp pepper
1/3 cup rice
2 tsp parsley

Have bone sawed or cracked into several pieces. Wipe pieces clean with a damp cloth. Put into soup kettle and add the water. Heat to boiling. Reduce heat, cover and simmer gently for 2 to 2 1/2 hrs. Remove bone, cut off meat and dice. Return meat and marrow to soup. Then add onion, celery, carrots, seasonings, and rice and continue simmering for 20 to 30 min. until rice and vegetables are done. Sprinkle parsley over each bowl of soup as it is served. 4 to 6 servings.

DB (sounds a lot like the beginnings of a good stock)

Elk tends to be milder in taste to deer,i like to make stock and soup out of the neck bones. heres a pic.my shop has 12 ft to trusses and this elk takes up all the 12ft then some.
