View Full Version : Brisket cook in Little Rock
When I arrived at my sister's house, my bro. in law pulled out a couple of brisket flats, a bottle of Woody's rub and said, "let's cook these things."
The smoker is propane fired and we used hickory chucks. We cooked at 250 and wrapped at 160 or so and pulled at 190. This was the best brisket I've eaten so far. Pics include my sisters and my brisket-cookin bro-in-law.

Looks like some tasty vittles that's for sure. I like the large slices myself.

Now, that looks like some good stuff to me!
I'm a fan of the big slices, too. They just seem to taste beefier. I warmed up a flat for some friends this weekend, and they all agreed.

Well, that was the best brisket I've eaten. Not sure why. I'll get some of his rub and try it at home and see if that was part of the reason.

Crawfish boil is this Saturday. Just when I'll be leaving is up to good ol' Continental airlines as I'm flying by way of a buddy pass.
I'll be sure to check in with the local authorities when I'm there though as far as not looking like a yankee and having the proper lingo. :wink:

Whew..glad the local gendarmes did not detect the aroma of smoked beef wafting in the atmosphere. From whut I can tell it still illegal to smoke briskets in Arkansas. My kin say everybody from Arkieville cooks pork. I know they like coleslaw on chili dawgs too. Whuts up with that? Not a good flavor combo in the least.

Up in these parts and I believe in part of Pennsylvania, they have places that like to put slaw and fries on sammiches.
Quite tasty at about 3 in the mornin' :roll:

The first time I experienced cole slaw on a sandwich was in Delray Beach Florida. There was this little Chinese gal named Edith who worked in a Cuban sandwich shop :shock: and they made sandwiches that they put in the front cooler for the choosing. All had cole slaw inside them.

The first BBQ pork sandwich I ever had with cole slaw was in Alabama (after living in Ark for many years). However, thangs have changed in the last 24 years since I've been in GA. Last week in Mayflower, AR, I had a BBQ pork sandwich with slaw. :shock: And it twerent bad. :shock: :shock:

I know what you mean about that cole slaw on a chili dog. I ate one of those one time, and it just didn't make any sense in my mouth at all. My wife went on and on about how good the dogs were at this place, so I went back the next day and ordered one without slaw. After they got done looking at me like I had just beamed down from Mars, they gave me one. That was one good dog, once they put the slaw on the side.
