OK, gang, I need some input from you. I'm breaking tradition in cooking pork, in that I've rubbed one butt down with Texas BBQ Rub. Now, don't tell my fellow Carolinians because its blasphemy to do that here! 8) 8)
As the butt gets close to being done, do you generally use a finishing sauce, or just let the rub stand on its own? How about a dipping sauce?

All those methods work What do you want to do?
I really like it mixed in Pulled Pork
If served on a plate I offer two different sauses on the table

For home eating..I usually just rub and cook it and let folks fix it like they like it. Franks hotsauce is good on there in my book while others might enjoy a thick sweet sauce. Whut seems to do best in Tejas comps (and you could certainly do it at home as well) is after it is pulled to sauce it up a little using your favorite tomater based sauce thinned out with a little apple cider vinegar..hot sauce...slug o sour mash whiskey...little apple cider and such stuff as that..splash o wooster dont hurt it a bit. Just keep tasting of it till it tastes right and make sure its thin. Not a whole lot..just enough to moisten it up a little. If you can tell its been sauced thats a sign it be overdone. Also sprinkle mo rub and black peppa on it after its pushed. That tends to perk it up too. Might not work in the Carolinas of course. I dont know much about furrin countries:)

As a pulled pork sandwich, I like it almost sloppy moist. I had one last night at a Q joint and I loaded it up with the house sauce, which is decent in my book.

Sounds good to me. Think I have caught the vision of the Carlolina folks as regards reds peppas mixed with apple cider vinegar. Thats why I just also floats mine with Franks. Tell ya truth now..once you get it propaly balanced...loaded up with KFC coleslaw etc. aint much telling whut kinda meat could be lurking down in there and trying to pass for hawg:)

OK Triaddad,
I live in Asheboro but I'm from New Orleans. I've been in NC for 20 years next month. Here in NC they usually cook the hog with no anything then offer the sauce after the cooking is done. You don't get a good bark in my opinion here in NC. Personally I like the Texasbbqrub and also the sauce I made from the recipe given on the TexasBBQRub.com site for signing up for the newsletter. It is great sauce. I also use a sauce I get in Birmingham, Al. from Costa's BBQ restaurant. I like a BBQ sandwich with a bun, dill pickle, and a thick ketchup slightly sweet based type sauce. I made my uncle's sauce also the other week from Birmingham and his was a tangy ketchup base sauce. It has grown on me the past few weeks.
I made some Eastern NC sauce about two weeks ago and today I used it to dip white bread in. I was good. The sauce also is alot hotter than when I made it.
BTW...We go to Westover Church there in Greensboro.

I use TexasBBQRub on butts, some time I foil them, sometime I don't> After I pull the pork, I mix in Eastern NC vinegar, brown sugar, salt, red pepper flakes and mix it in. I then vac pac it into 4 or 6 bun size servings. Using hamburger buns, slaw and that BBQ is the best. Also, sometime I just pull it, vac pac it and add any sauce I want when I use it later on or if I give some away, I tell the people to use what they like on it. Some use no sauce.

The rubbed butt and sauce gave the traditional eastern style butt a run for its money!

Boy, was I pleasantly surprised by the rubbed butt. The Texas BBQ Rub was excellent! I made a dipping sauce utilizing more Texas BBQ Rub, which also turned out nicely. The sauce was reminiscient of Lexington style sauce, but the taste was much better, in my opinion.
The rubbed butt and sauce gave the traditional eastern style butt a run for its money!
We've found us another keeper!!!
It's all about trying new ways and things. Next time, glaze one down with pineapple habanera. Guarantee you won't have any left over.

We just tried the Pineapple Hab on a few things and Kathy likes it better than I do. This will be my first go-round with Mandarin Orange...soon as the Post Orifice sends it in from Texana...

I'm going to have to try that pepper jelly one of these days. Problem is that I can't even begin to imagine doing any better than TBBQR on anything. Seems to be all anyone needs. Maybe I can get woodman to throw some on something to help persuade me 8)

I certainly like Bill's rub on butts. However, when they're done, I just like some Tabasco on it.
Say, my wife grew up just outside of Kernersville.

With us it's a combination of not having the chance along with trying to remember what we're doing. Since February's vacation I've done about 6 shows and still in rehearsal for 2 others. And I got a small lighting gig with a dance concert this weekend coming...In addition I manage to squeeze in some electrical work during the day :lol:
And Kathy is always getting up at 5:40 during the week. On weekends she gets up for her 8am Yoga class that she is addicted to.
So the sausage is sitting in our freezer, waiting patiently to come back to life, just to be eaten by us...soon...

Once, when we were engaged, we went over there for a shower thrown by friends of her parents, but we haven't been back. The problem is that her parents moved while we were in college. It was beautiful around there!

Well, if they come after you, they'll get me, too. I'm just down the road in Clemmons, and I've got a couple of pounds of Texas BBQ Rub in the pantry.

Hey Triadad, another cool trick that I like to do is to take a whole head of Garlic, seperate the cloves & insert each one into slits that are cut into the meat all over & then apply my mustard & rub & then toos it on the pit. Talk about slap yo Momma good?,,,,,,, Dayum!!

Well yall musta sleep through a few of Justeens Cajon cooking chows on channel 13 which showed up each Sat morn for years. Now Justeen only cut the slits for beef..and then he stuck a garlic clove..a slice of green onyawn and whut appeared to be a fresh green Tobasco peppa down there and cut off the top flush. Now that should cure whutever ails some old bland pushed pork I would just betcha.
