View Full Version : Spare ribs at Sam

A few weeks ago I was talking to the meat manager about whether he could get St Louis style ribs. Yesterday I noticed all the spares are now the St Louis cut. Anyone using this cut? I'm going to have to go back and get some. They looked very good.

FYI. From "Ask The Meatman"... Originating from the sparerib, St. Louis style ribs are prepared by removing the brisket bone approximately parallel to the rib side, exposing cartilage on the brisket bone side.

Man, I hope they don't start that at my Sam's. I like my brisket bone. Around the house, that's "Daddy's Weird Rib."

up here in yankee country, we still have the upper flap? on ribs at sams.

Man, I hope they don't do that at mine either. I cut mine like the St Louis style but that brisket bone section is great snack food while othe stuff is finishing up and is some of the tastiest part of the ribs :D

Whole ribs no trimming here at Sam's. Which is nice because the cutup stuff gets thrown on the smoker for a quick treat.

Plus it is stress relieving to cleaver the &(*^&&(^ out of a rib.

Going against the grain, but I like the St. Louis ribs. I don't like all that cartilage in the trimmings. I wish the Sams here would carry them. I buy St. Louis style by the case wholesale, but I'm not crazy about the quality.

Not at Sam's here. Brisket is at $1.38, $1.26 case. That's a .20 drop.

QnBrew....ain't hard to turn a whole slab of spares into a St. Louis slab. If it wus, I couldn't do it. And I can do it.

Do you Texas bouys know how good you got it? Brisket here is about 8.34 times as expensive as gasoline here (on a $/gallon basis). :shock:
Seriously, meat is 2 to 3 times as expensive up heah. And it ain't like we don't have cows here.

I bought 2 cases at Sam's in Houston last week and paid $1.42 per pound. Spares were $1.79 per pound.

Hey Qbrew, I trim the rib out and save the trimmings for my Sunday Spagetti gravy. I brown the pork trimmings in olive oil and throw it in the sauce with Italian sausage and meat balls, and simmer for about three hours. :) :) :)

Weird, huh? When I was at Sam's today, I was looking at ribs and noticed the spares are marked, "...with brisket bone removed".

Them "St. Louis Style" ribs are gonna cost ya' extra since they been trimmed, then they are gonna turn arond and sell bags of "Pork Brisket " and make extra off of the trimmings. They sell them here at Walmart and HEB.

I made a couple of phone calls (wouldn't mind doing a brisket this weekend). We don't have a Sam's here, but **'s only has flats at $3.49/lb. Walmart is reasonable, but they have no packers now and no price info as well. ??

Wow, I would have thought Georgia would have been in line with our prices. I guess you dont have as many "undocumented workers" as we do.

Only Mexifornia has more. But, we're catching up quick.
To be honest, the last time I bought packers at Wallyworld, I recall being pleasantly surprised at the price, so all is not bleak here.

I bought two 13# Choice briskets this week for $1.79. They looked as though they had been partially trimmed as well. Nice thick ones, but I could still fold them in the middle to some extint.
