I've tried a few, I just havent found one that just knocks my socks off yet. Anyone have a goodun? I like to fix up one butt with sauce and one without. Market just had a sell on butts for .99 per lb, got a few to do up. Hope I'm not blackballed for asking for a vinegar sauce, since this is Tejas based forum :oops: Remember guy's; love the sinner not the sin :lol: have mercy on ol' TW

If you can find it, Scotts BBQ sauce is probably one of the best ones out there on the market. I, myself, make my own, but if I need to buy one, that's the one I go w/.

GOT THE WEBSITE PULLED UP, I'LL ORDER SOME TO GIVE IT A TRY. BUT I'M LOOKING FOR A VINAGER CAROLINA TYPE SAUCE, NO TOMATO SAUCE. I HAVE A HOMEADE TOMATO BASED SAUCE I AM REALLY HAPPY WITH. SORRY I GUESS I SHOULD HAVE BEEN MORE SPECIFIC :D
I have some Scott's at home and there's nothing tomato-y about it. It's almost all vinegar. It's not bad but you can make your own.
Here's mine:
1 cup cider vinegar
2 tablespoons salt
1 tablespoon brown sugar
1 teaspoon cayenne
1 teaspoon red pepper flakes
Mix all ingredients together. Let stand as long as possible, at least 1/2 a day, but the longer the better. I let mine go for a week before serving, just give 'er a stir once in a while. It goes nice with this peppery sandwich slaw too:
2 cups shredded cabbage
2 tablespoons minced onion
2 tablespoons white vinegar
2 tablespoons mayonnaise
1 clove garlic, minced
2 teaspoons sugar
1 teaspoon ground black pepper
1/2 teaspoon salt
Actually I do this X4 since 1/2 a good sized head of cabbage is about 8 cups and I use 1 Tbsp of pepper instead of 4 tsp. You won't miss the last tsp, that's for sure.

I like this recipe. This is the Jacks old south one.
2 cups cider vinegar
3 tablespoons ketchup
2 tablespoons paprika
2 tablespoons brown sugar
4 teaspoons kosher salt
1 tablespoon hot sauce
1 to 2 teaspoons cayenne
1 to 2 teaspoons ground black pepper
Combine all the ingredients in a nonreactive mixing bowl, mixing until the sugar and salt dissolve. Taste for seasoning, adding pepper as needed. Transfer to a clean, sterile jar and refrigerate. Will keep for several months.

Mite try lookin fer this one in one of yer local grocers.....I use tha original sauce from time ta time when I noe that sum peeple like a vinegar taste'n sauce rather than tha standard sweet tomato taste. Never tried any other variety like tha mustard one or hickory smoke flavor. Not sure if its a tomato base or not....I jus noe it's vineggary taste'n an purdy good. :P

got me a jar of scotts from triaddad in the sauce swap...can't wait to give it a try.
one that i like is Wickens (http://web.inetba.com/wickers/productCat0.ivnu) Looks like it's got a similar consistency to it as the jar of scotts i've got.

We've had this conversation before, it seems. Did you ever see Wells bbq sauce in the stores there in Eastern NC? I picked up another sauce at some little market around Kornegay several years ago. Man was it HOT. I bet it would remove paint.

Well now if we still talking Scott's here which aint much telling around this place the way everybody go off chasing rabbit trails...but...the neighbor who used to live across the street was from Virginny but he had some yankee kin in the Carolinas who send him the Scotts sauce by UPS. Fell madly in love with that stuff..he give me a bottle or two then I borrowed one..then I give him the money to get me some of my own..blah blah blah..but then he moved off..sniff sniff. Just now discovered it is now in cyberspace. I like that stuff on brisket too. Shoot sometimes I would drink it outta the bottle. Found out purty fast and wasting only a hundred dollars or that Texas bbq judges do not care much for its flavor on pushed pork. Course till a few years ago nobody in Texas had even heard of push pork..so it aint no wonder they dont whut it supposed to taste like huh? They think it should taste like Kraft sauce..so you help em out by using Kraft sauce. Simple huh?

Here is also another version of his recipe. I made the smaller batch the other week and it does get better over time.
Gallon Batch Recipe
1/2 gallon cider vinegar
18oz Carolina Treet Original
2-16oz Karo Brown Sugar syrup
3 tbls salt
4-6 tbls crushed red pepper
8 tbls sugar
Half Gallon Finishing Sauce
32 oz cider vinegar
9 oz Carolina Treet Original
16oz Karo Brown Sugar syrup
9 tsp salt
2-3 tbls crushed red pepper
4 tbls sugar
Quart Recipe
16 oz cider vinegar
4-5 oz Carolina Treet Original
8 oz Karo Brown Sugar syrup
4-5 tsp salt
4-6 tsp crushed red pepper (1=Mild, 2=medium,3=hot,4=Ka Boom!)
2 tbls sugar
Shake, Shake, Shake….. Let sit & mellow for two days to 2 weeks….
Adjust Vinegar and Syurp for Sweetness or Sour.

More tangy than spicy, but you can adjust the tabasco. Sometimes I up the brown sugar to make it sweeter. This is good.
2 cups apple cider vinegar
1 cup yellow mustard
1 cup brown sugar(packed)
2 tbs finely ground black pepper
1 tbs worcestershire sauce
1 to 2 tbs tabasco sauce(depending on how hot you like it)
1/2 tbs salt
Mix together and keep in fridge. Make it the day before if you can.
I add a few splashes of Angustura bitters to my sauce. Keep it light and no one will pinpoint it. It gives the sauce a little more backbone.

I made this a couple weeks ago, but I doubled the sugar and mustard and added a teaspoon of finely ground habanero pepper. I also put in the double boiler and reduced it a bit. I ended up with more of a hot sauce than a BBQ sauce, but it was pretty tasty.

You should try it as is, it is really good. The tabasco gives it a little spice while the brown sugar keeps it sweet.

I got a bottle of Scott's in the exchange but have not had time to try it yet. Is it really hot? the bottle says "Very Hot" and I don't like hot sauces at all. I do like a sweet and vinegar sauce though.

I just signed up here tonight, but I was born and raised on eastern NC BBQ sauce.
This is my family recipe:
-˝ gallon apple cider vinegar
-2 cup white vinegar
-2 tsp cayenne pepper
-5 Tbsp brown sugar
-4 Tbsp red pepper flakes
-5 Tbsp cracked black pepper
-5 tsp kosher salt
Bring it to a simmer, but don't boil it. It's better after it sits a week.

oh yea, it'll burn your nose hairs. I think the safe thing to do would be to carefully place it in a box with some good packing material and send it on up to me. I'll take care of proper disposal.

It was pretty good the way I made it. I might put in a couple drops of Pure CAP next time. I have some habanero mustard that I might use as well.

Ok :shock: for the life of me.....I will never understand who came up with putting ketchup flavored vinegar on BBQ :? / We all have different tastes & I am glad I got to try the real deal & no offence is meant to be given;….but Fred does NOT like the NC vinegar based sauce & will stick with TX style BBQ 8)

When I got married here in North Carolina we had a NC pig pickin. I'm from New Orleans and no one from Louisiana or Alabama had heard of a pg pickin. My best man got a plate of cooked pig and asked where is the BBQ sauce. He was also amazed at what the sauce was. The vinegar stuff. I have come to eat it. I also made the recipe I posted on this thread. I haven't used it on BBQ but I did use it to dip white bread in. The sauce does get better over time. I still like a ketchup, molasses, brown sugar, type sauce. Now that I've learned to cook good butts, ribs, and brisket I really love
cleglue's NC BBQ with his type of sauce (not vinegar based) (I like texasbbqrub's BBQ sauce recipe).
